Espinacas con Garbanzos [Spinach and Chickpeas]
Adapted from Moro: The Cookbook and Lobstersquad
One of the reason I blended recipes was because I wanted the approachability of Ximena’s version but also some of the extras in Moro’s — the vinegar, paprika and the fried bread, mashed to a paste. Except, in hindsight, I think I’d also enjoy [...]

First off, this dish is not called “spinach and chickpeas”, it is espinacas con garbanzos. Don’t you agree? “Spinach and chickpeas” is something you eat because you should — it is healthy and you aspire to be. Espinacas con garbanzos is something you eat because it sounds sexy, and doesn’t taste half bad either. It’s hearty and smoky with a little kick, you eat it on little fried bread toasts at a tapas bar in Spain.

Or, you know, in New York City on another brutally rainy March night. My friend Ang had a tapas pot-luck last Friday (the baby ditched us for a better party at his grandparents house) and, yes, I brought a Spanish dish to a Spanish party that did not include a single format of pork. Wild! Hey, I figured others would have the chorizos and jamón serranos covered. Me, I wanted some Spanish comfort food. I’d tried a version of this dish a few years ago, thanks to the sweet nudging of Ximena at Lobstersquad and instantly loved it. It sounds like it would be too simple to hold your interest, perhaps something you’d eat because you “ought” to, but it tastes like something you’ll crave again and again.

Chana Masala
Adapted from a Madhur Jaffrey recipe, which was adapted over here because much to my frustration, I own two Madhur Jaffrey books and this is in neither

My latest snap of cravings for Indian food hit a couple weeks ago, and because I haven’t learned anything over my two stints in the East Village, we ordered in from a restaurant on 6th Street and received puddles of oily, listless and weakly spiced curries that we dragged our way through only to be rewarded with bellyaches. Also, regret. I have an archive of Indian recipes I make several times a year, that I crave like clockwork as soon as we hit a cold snap and never disappoint, a cabinet full of robust rust and mustard-colored powders and seeds and yet I let someone else put lackluster chana masala in our bellies.

I’ve made a slew of chana masalas — a Northern Indian chickpea stew with tomatoes — but none have made their way to you because while they’ve all been edible, with bowls licked clean as there are exactly no intersections of chickpeas and tomatoes that I won’t gobble down, I had yet to find The One. Many were closer to a spiced tomato sauce with chickpeas in it; few had the spice assault I was looking for and none had that thing, a sour note, you find in great Indian food but is more elusive to American home cooks with a curry habit.

Black Bean Soup with Chipotle and Toasted Cumin Seed Crème Fraîche
Adapted from Bon Appetit
We finished this soup, by the way. Every last serving. We never do that. It’s magic, I tell you.

So, I told you about the brisket. Or, the way we talk about it, thhhuuuuh brisssssket, it’s deliciousness making our syllables stretch out melodramatically. We pulled it into tacos with slaw and pickled onions and it was a great end to a great year. But I bet I know what you’ve been wondering since then, “But no appetizer?” Well, let thie question vex your brain no longer: we had soup. (Jacob, however, got into the margaritas. Again.)

My friend Jocelyn made a wonderful black bean soup and she topped it with a toasted cumin seed crema and I just about died, the crema was so good. I mean, the soup was delicious but the crema was one of those toppings that was in lock-step with the soup: the richest, creamist, smokiest accent to a spicy, hearty soup. Since I’ve been slow cooker obsessed since that very day, I vowed to make a version entirely in my new BFF, and to top it with that toasted cumin seed cream. Frankly, the soup is just an excuse to get to it.

Barley Risotto with Beans and Greens
Adapted generously from Food and Wine

So here’s a little eating-out confession: When we go out to restaurants, no matter how old-school posh or hot-new-It-chef-on-a-grungy-block, I rarely find myself moved to exclamation points over a piece of steak or a pasta dish; instead, it most of my ooh-ing and aah-ing is formed over the earnest piles of beans and grains and greens that form a bed for the main attraction. I’m always applauding the way a chef managed to get such flavorful beans, grains and even unloved greens, cooked so perfectly that I clean them out long before I stick my fork into the duck breast. I guess what I am trying to say is: A lot of people cook steak well. Making kale and wheat germ taste like nirvana itself is what really blows my mind.

It’s also, sadly, the place where the gap between what I pay others to cook and what I whip up at home is the greatest. I miss those sauces — those puddles of concentrated buttery rich brothy flavor! I want to splash in them! — I miss all of the in between spaces on my plate. I vow to conquer that this year. Bring on the puddles!

I have spent the last few months unearthing recipes I’ve had bookmarked for an eternity. A whole lot of them, mostly things I have spared you, did not exactly age like fine wine, as they say; fillings ran, vegetables never caramelized, spiced mixed nuts were grimy and cookies were painfully sweet. The rest of them, however, caused me to become consumed with regret when I think of all of the times we could have already consumed mindblowing butterscotch, caviar-esque creamed mushrooms and speedy, rich biscuits but did not know of them yet. This is one of those times.

As I mentioned yesterday, I’m all about hosting brunch, but only if I can make everything in advance. When it comes to biscuits, bacon, baked French toast and fruit salads, pulling it off is obvious. But I always get lost on the eggs, and for a whole lot of people, it’s not breakfast if it doesn’t involve eggs. This strata — really, a savory bread pudding — is the missing piece because not only can you make it the night before, you are supposed to.

Mushroom Marsala Pasta with Artichokes
Adapted from Giada DeLaurentis
So what’s the story with this? A lifetime ago, I told you about Alex’s Chicken and Mushroom Marsala, which I said, frankly, was all about the mushrooms while the chicken lingered in the background like a b-list celebrity. So when I saw Giada making a pasta dish that [...]

People, I’m about at the end of my ordered-in dinner rope. It’s not that — as the front page of this site might suggest — I haven’t cooked anything since the baby arrived, it’s just that I’ve largely cooked things that could be assembled during naptimes, and most of Alex and my conversations about meals go, “What should we do for dinner?” “I made mushroom toasts and a bowl of butterscotch sauce today!” “Right, so what should we order?” And so on with the pho, cracker-thin pizza and hummusiot dinner deliveries. For three months. At 93 days, even shakshuka broiled with haloumi gets tiresome.

Now, I don’t expect any violins, especially from folks without the East Village’s globe of food delivery options at their fingertips, but I am sure you all understand what it means to desperately crave a homecooked meal. And I don’t mean a 5-hour braise or hand-sheeted pasta (though, ahem, I wouldn’t push either away); even a simple sautéed chicken, which I managed to eek out a few weeks ago, stands out as one of the best things we’ve eaten in a month.

Creamed Mushrooms on Chive Butter Toast
Adapted from Melissa Clark, New York Times, 5/16/07
Clark originally crafted this recipe for morels, but the fact that they’re out of season now was really a boon as I realized, not even for the first time, that when you cook mushrooms well, even simple brown ones will taste like luxury. [...]

My husband’s people — that would be The Russians, if you’ve been following along at home — really like their caviar. It’s rare that a signature spread of zakuski doesn’t include at least one form of gem-colored eggs by the thousands, usually served with sour cream and small crepes. Me, I’m a troglodyte; I’m unable to appreciate such fine things in life, and generally breeze right past the caviar to spear a potato with my fork.

But it doesn’t mean I don’t like a little fancy something-something now and then; I just want it to suggest caviar but not actually being it (or, ahem, costing it). So when Melissa Clark called this mushroom preparation giving them “the caviar treatment” in an article eons ago, I was both excited, because I do love me some mushrooms, and dubious — dubious enough that it took me over two years to make it. And that, my friends, was a terrible waste of time.

I started fixin’ for some creamed spinach when I was pregnant — yes, they aren’t kidding about those iron cravings — but I never got to making it this summer. Because I didn’t have… time. Now, just pause for a second while I reach through this computer to throttle my summer self for thinking she knew what not having time was all about.

Then I had a baby and I was still craving creamed spinach but, you know, then I had a baby and really didn’t have time. And a week passed and then a month and a second month after that and on the very first day of his third month of life I was still drooling over an imaginary bowl of creamed spinach and decided enough was enough.

Swiss Chard and Sweet Potato Gratin
I won’t lie, Swiss chard can be a real pain to prep, what with the rib-separation and rendering of unfathomable volumes down to a few measly cups of cooked greens. I like to chop, wash and dry mine the day before, but if you’re especially in a rush, I see [...]

Surely I’m not alone in this: When I’m eating starchy foods, I think I should be eating more greens. When I’m eating my greens, I wish I had heavier foods to balance them. And pretty much all of the time, I wonder why it has been so long since I made macaroni and cheese.

And this is what happens when I stewed all of these thoughts together in my head over countless feedings. I love sweet potatoes but I find most preparations of them too heavy and sweet (which is why I stick to spicing, curry-ing and/or spicing, curry-ing and frittering them); I love chard but I find most preparations of it too earnest but when I put these together in a gratin I ended up with the most bubbling, gurgling, cooing delight of a fall comfort there could be.

(Or maybe I’m just talking about the baby.)

Moroccan-Spiced Spaghetti Squash

Cooking spaghetti squash in your microwave is super-quick, but roasting it isn’t much more work — I’ve made it both ways and it works equally well. I keep promising you all some quick, easy recipes but sharing instead a mousse that requires at least five bowls and an electric mixer that must be washed down no less than three times, a quiche that has at least three different components, cauliflower that demands you cook each ingredient separately and a from-scratch doughnut recipe that entails reducing, rolling, freezing, frying and dipping. I have no doubt that you’re standing out there in front of your monitor, hands on hips, demanding answers. Except I don’t have any logic or rationale that will explain I choose to use my limited free minutes of time to make elaborate recipes and not, say, dinner, I only have this one peace offering today.

There’s a caveat, however. This is a ridiculously quick recipe if you have a microwave. We used to but don’t any longer so it still took over an hour, but it’s an hour that requires only a few minutes of hands-on time. Still, it is my favorite preparation of spaghetti squash, not only because it is delicious but because it approaches winter squash in my favorite way: by waking it up. I’ve never had a taste for squash recipes with cream or sugar or piles of cinnamon; I think the natural sweetness of squash is best contrasted with bolder ingredients, like garlic and tahini, jalapenos, olives and preserved lemons, chile-lime vinagrettes, hearty beans and ham or cayenne-dusted caramelized onions. I think you get the picture.
