I&#8217;ve been at a bit of a standstill in the kitchen this month. It&#8217;s not really a lack of ideas vexing me, but a lack of desire to spend any time in front of a stove or oven now that the weather is so delicious, I believe I at least owe it the courtesy of spending time out in it. Sure, there are savory tarts and summery salads and even another <a href="http://smittenkitchen.com/2009/07/light-brioche-burger-buns/">burger bun</a> recipe on my agenda; there&#8217;s <a href="http://www.flickr.com/photos/smitten/3703183186/">a cake in my fridge</a> that&#8217;s so pretty I will not be the least bit offended if you mount a protest that I am waiting until next time to tell you about it, but I need to level with you: I have not cooked a real dinner for us in over a month. A <i>month</i>! Perhaps longer.</p>

<p>None of this has stopped me from bringing home mounds of produce each week from the markets. My current (boring) preggo cravings are green beans and summer squash, and I&#8217;ve made countless batches of <a href="http://smittenkitchen.com/2009/07/slinging-slaws-summer-salads/">this salad</a> and <a href="http://smittenkitchen.com/2007/08/my-favorite-side-dish/">this saut&#233;</a> but a proper meal, they are not. Today I staged an intervention with myself once and for all. I figure it can&#8217;t just be me that is unmotivated to cook a decent, light summer meal and that the only solution would be to create something worth rallying myself &#8212; and others &#8212; over.</p>

One of my favorite things about cooking is being surprised. As much fun as it is chasing some childhood recipe or flavor ideal I caught a whiff of at some restaurant, somewhere, nothing matches the surprise of finding a recipe that you&#8217;re not entirely sure will be your thing, trying it anyway and then spending the rest of the night going &#8220;this is good,&#8221; &#8220;wow, this is so good,&#8221; and &#8220;wow, I had no idea it would be this good.&#8221;</p>

<p>Well, that part is kind of boring to anyone but the person experiencing the delicious surprise but still, this recipe is one of those. I have to admit that my fearful-of-combining-sweet-and-savory husband has poisoned me a little, and when I see warm spices like cinnamon and allspice in a savory recipe, I&#8217;m doubtful I will like it. Not that it won&#8217;t work, per se, just that it won&#8217;t work for me. Even though a good part of the world adds these spices to their savory dishes and surely they can&#8217;t <i>all</i> be wrong.</p>

<p>But these meatball skewers are awesome. Awe-some. And then some. I expect that some astute readers might have noticed that I rarely feature meat recipes; I&#8217;m not enthralled enough with it that I am easily impressed into trying new recipes. But when I am, well, hot damn. I didn&#8217;t think I could even like a meat <i>anything</i> this much, nonetheless a meatball. They&#8217;re spicy and juicy and delicious charred at the edges, and the minty yogurt sauce is the perfect contrast for the kefta as well as the zucchini skewers and I want more right now.</p>

Believe it or not, I&#8217;ve actually cooked dinner a few times this month. Like, three! Maybe even four. I don&#8217;t know, does a corn tortillas chmeared with refried beans, salsa and toasted with some shredded cheese on top count as dinner? Oh it does? Then definitely, most certainly four. We&#8217;re all about the refined eatin&#8217; at the smittenkitchen.</p>

<p>But this dish is a winner. In fact, if I weren&#8217;t working on a few humongous projects right now I would have made it again, maybe even twice. It&#8217;s the perfect antidote to the simultaneous and conflicting internal dialogue of &#8220;I&#8217;m craving a big bowl of spaghetti!&#8221; and &#8220;But it&#8217;s bathing suit season!&#8221; Also, it&#8217;s really nice to find ways to lighten up pasta when it is hot and sticky and borderline-rainy <i>every single day</i> and you&#8217;re beginning to believe that you might not get to the beach even once this summer, prepared or not.</p>

<p>The recipe comes from Michael Chiarello and I&#8217;d seen him make it a few years ago on his Food Network show, back when they played it more than once a week, on Mondays, at 1 a.m. (Fine, I&#8217;m exaggerating, but that was indeed the last time I saw it, and it was DVRed .) It was one of those &#8220;here, I cook healthy too&#8221; episodes that always make me giggle because they usually so eloquently sum up our American confusion over what &#8220;healthy&#8221; actually means (see <ahref="http://smittenkitchen.com/2007/01/cake-paradisi/">this cake</a> for further evidence).</p>

When I made my version of <a href="http://www.smittenkitchen.com/2007/07/rat-a-too-ee-for-you-ee">baked ratatouille</a> back in July, I had intended to follow up with suggestions of other things you could do with leftovers, or leftover ingredients, as I always have leftover components but have not yet found a store that will sell me two-thirds of one zucchini and a half an eggplant. I really hate having a quarter eggplant leftover, because I&#8217;m very unlikely to use it and incapable of throwing it away, so what usually happens is I stash it in the fridge where it gets forgotten about, rots, is found a month later as when I scream in horror and throw it away afterall, having flashbacks to that time I lived with three friends and we were cleaning out the fridge and found something completely awful way in the back and Dave said &#8220;sorry, that was my kiwi&#8221; and I was like, &#8220;uh, that&#8217;s a lemon.&#8221; </p>

My favorite side dish takes five minutes to make. It has only three steps. No garlic or shallots get minced, nothing gets topped with butter, and shockingly, it involves no truffle salt. It has only two ingredients, and the only reason I&#8217;ve held out this long telling you about it is because when I see a recipe that swears it will combine two ingredients in an entirely new and innovative way, I roll my eyes. </p>
<p>But this doesn&#8217;t mean that you should be limited by my jaded expectations. In fact, I&#8217;d be spectacularly sad if you were, because this is wonderful. Fantastic. It&#8217;s so fresh but deep, so simple but eloquent. I have craved it incessantly this week, and am certain I could eat it morning, noon and night.</p>

Adapted from several sources
Yield: 2 loaves or approximately 24 muffins
3 eggs
1 cup olive or vegetable oil
1 3/4 cups sugar
2 cups grated zucchini
2 teaspoons vanilla extract
3 cups all-purpose flour
3 teaspoons cinnamon
1/8 teaspoon nutmeg
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1/2 cup chopped walnuts or pecans (optional)

If any thing could tear me from my at times maniacal devotion to small spaces, walk-up apartments, crowded sidewalks and our crystal rattling at 11:30 p.m. on a Sunday while the stench of hot tar seeps in through our leaky windows because the City decided this would be a good time to repave the avenue below, it would be the suburban pastoral longing for a backyard garden where I could grow tomatoes, peppers, zucchini and herbs. </p>

<p>Growing up, this is what my parents set aside a space on the side of the house for, lined by a raspberry bush and just steps from the sour cherry tree. Sadly, the tree died just as I developed a taste for the tart cherries, the raspberry bush became overrun with poison ivy, and the last round of landscaping whittled the garden area to half its size, but I swear, somewhere in the back there is still a matted indentation from the Summer of the Zucchini Bats.</p>

As envisioned by Smitten Kitchen
1/2 onion, finely chopped
2 garlic cloves, very thinly sliced
1 cup tomato puree (such as Pomi)
2 tablespoons olive oil, divided
1 small eggplant (my store sells these &#8220;Italian Eggplant&#8221; that are less than half the size of regular ones; it worked perfectly)
1 smallish zucchini
1 smallish yellow squash
1 longish red bell pepper

Tell me I&#8217;m not alone in this: You saw <a href="http://www.pixar.com/featurefilms/rat/">Ratatouille</a>, fell in love with Remy (though you still jumped a foot in the air when you saw a significantly less-charming rodent scamper across your path on the way home) and found yourself with a pressing craving, not for the heavy and too-often soggy traditional Proven&#231;al ratatouille, but that kaleidoscope of spiraled colors they served to the haughty and (spoiler!) soon-humbled restaurant critic. </p>
<p>I can&#8217;t believe how well this worked out. I also can&#8217;t believe I cooked a cartoon dish created by an imaginary rat. But I can believe I&#8217;ll be making this again tomorrow, because it&#8217;s delicious, seasonal, and an incredible cinch to make. </p>

1 1/2 pound zucchini (about 3 large)*
1 1/4 teaspoons salt
1/2 pound arugula, stems discarded and leaves cut into 1/2-inch-wide strips (6 cups)
1 ounce Parmigiano-Reggiano, coarsely grated (on large holes of a box grater; 1/2 cup)
3 tablespoons extra-virgin olive oil

Here in the Northeast, where our winters get frigidly cold and our summers are known to snap into the high 90s for days on end, I have a somewhat sinister theory about the weather, and that is that it&#8217;s mocking you. It&#8217;s waiting for you to snap and when you do, it has a hearty laugh at your expense. Bust out the ski jacket, 20-foot scarf and Gore-Tex accessories the first cold day in October? Snicker, snicker. Sink down in front of the a/c with a bag of ice on your forehead the first 90-degree, 100 percent humidity day in June? Imagine the sun&#8217;s <a href="http://en.wikipedia.org/wiki/Montgomery_Burns">Mr. Burns</a>-ian cackle, muttering &#8220;excellent.&#8221;</p>
<p>I don&#8217;t know what it&#8217;s like where you are, but hoo boy, is it hot up in NYC right now&#8211;and it&#8217;s not even June yet, which means that it&#8217;s too soon to succumb to bowls of icy granita and dinners of frozen grapes and proscuitto-wrapped melon. Fold your cards now, and what will you do when summer really steps up to the plate (and God-willing, the Yankees) in July? Nope, no, can&#8217;t have it. But it doesn&#8217;t mean that tonight is not as good of a night as any to take a step back from the stove with something I fell upon two nights ago that was so gorgeously simple and different, I could imagine it keeping us cool all summer. </p>

Despite the fact that it takes some kind of crazy to cook a separate meal while embedded in preparing a multi-course meal for a dinner party, yet another night of take-out &#8212; even from my beloved Kitchen Market &#8212; seemed unbearable last night, and seeing as it was the first night of Hanukah, it was only appropriate to make a batch of latkes. But tradition is so boring, isn&#8217;t it? Thank goodness for Food &#038; Wine&#8217;s deliriously enticing <a href="http://foodandwine.com/articles/a-latke-vodka-party">latke-vodka party</a> (this is the second year in a row I am kicking myself for not having one &#8212; 2007 Deb, get on that!), pairing them with the <a href="http://foodandwine.com/recipes/sweet-potato-latkes-with-wasabi-and-wasabi-tobiko">wasabi cream topping</a>, the suggested accompaniment for the sweet potato variety. Awesome, awesome. We skipped the caviar and what-not on top as only one of us would have loved that and it was not the person standing over the stove, tra-la-la. It all went perfectly with a lightly-dressed napa cabbage salad and, you betcha, a hefty glass of wine. </p>
<p>And now, the kitchen yet again beckons. Soup! Tarts! Salad! Cheater&#8217;s creme anglaise! Those croutons aren&#8217;t going to toast themselves, lady. </p>

I am the last person on the internet to join the Cute Overload train; I mean, I get it, it&#8217;s <i>cute</i>. I love cute, you love cute, cute makes the birds sing and the sun shine and the world go round and tra-la-la. <i>I get it</i>. But man, oh man. Sometime in the last two weeks it hit me like a ten ton truck and people, <b>the cute is killing me</b>. I can&#8217;t breathe sometimes, the cute is so strong. I&#8217;m tag-surfing <a href="http://www.flickr.com/photos/theconr/248006634/">snorgle</a> on Flickr, sputtering nonsensicals like &#8220;piggle snorgle tiny mouf action ohmy gah! Gah!&#8221; when Alex asks me how my day was. I want to take bites of the cute, but I know, I know I&#8217;d bite down too hard and take a <a href="http://mfrost.typepad.com/cute_overload/2006/11/peekapuppost.html">piece out of the ear</a>.  When she added an <a href="http://mfrost.typepad.com/cute_overload/i_shall_leeck_you/index.html">&#8220;I shall leeck you&#8221;</a> category it was about all the precious I could take and I had to let Alex in on the Overload, my new time-sucking Internet habit; Alex, who like any man with two eyes pulse, quickly found the <a href="http://mfrost.typepad.com/cute_overload/cats_n_racks/index.html">Cats &#8216;n&#8217; Racks</a> and let&#8217;s just say, it is not just my redonk little habit anymore.</p>
<p>Speaking of redonk, in my predictable language-sponging manner, I&#8217;ve also picked up the slang, the cute-&#8217;bonics and it&#8217;s having a horrific effect on my ability to string sentences this week. Take our dinner tonight; it was just one of the best, most awesome, breathtakingly lovable weekday night dinners we&#8217;ve had in ages and I can just tell, these fritters are gonna be yr new BFF, too!!!1!  Do you see? Do you see how that sentence just fell from grace when my enthusiasm kicked in? Let&#8217;s hope this passes real soon.</p>
