Sunday night, I emailed off 497 pages containing 80,392 words to my editor (846 photos had been sent over before the weekend), went to bed at 2 a.m., woke up at 6 a.m. and a few hours later came home to a completely empty apartment and two entire hours to myself &#8212; two hours to nap or just stare slack-jawed at the ceiling fan and think about nothing for a while &#8212; and decided instead that I&#8217;d had enough of this pumpkin-free November I&#8217;d been having and went back into the kitchen to make pudding. That&#8217;s normal right? That&#8217;s what normal people do, right? Wait, don&#8217;t tell me.</p>

<p>So, a <a href="http://smittenkitchen.com/book/">manuscript</a> has officially been delivered, a whole 6 hours in advance of its deadline. I am the eternal college student, apparently, though if you&#8217;d asked me 18 months ago when I was going to finish my book I could have probably told you right then &#8220;Five minutes before it is due.&#8221; I&#8217;m classy like that. I would hardly say that the cookbook process is finished &#8212; we&#8217;re still ironing out some kinks, there&#8217;s copyediting (I can&#8217;t be the only one who pities the copyeditor who must deal with the madness I pass off as grammar, right?), some reshoots, they&#8217;ve been kind enough to offer me design input though they&#8217;ll probably regret it when they see what bad taste I have&#8230; I won&#8217;t bore you with the details. But for the most part? I&#8217;m back! Whee! And there&#8217;s no place else I&#8217;d rather be.</p>

Odds are, this week is full of sugar for you. Chewy sugar, hard shiny sugar, sugar molded into candy corn, fluffed into <a href="http://smittenkitchen.com/2009/06/springy-fluffy-marshmallows/">marshmallows</a>, coating <a href="http://www.amazon.com/gp/product/0811876373?ie=UTF8&#038;tag=smitten-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=0811876373">adorable little popsicles of cake</a>, <a href="http://smittenkitchen.com/2009/11/salted-brown-butter-crispy-treats/">wound with brown butter around grains of puffed rice</a> and that doesn&#8217;t even include the peanut butter cups you&#8217;ll pilfer from your kid&#8217;s trick-or-treat bucket this weekend followed by the sweet slide from Thanksgiving&#8217;s marshmallow-topped sweet potatoes and December&#8217;s minty candy canes.</p>

<p>I, for one, could really go for a salad right now. I&#8217;ve been roasting a lot of squash and sweet potatoes lately, usually for the half-toothed member of our family and one day, I was looking to turn it into more of a fall salad and I stumbled upon a recipe from Bon Appetit. I nixed the arugula because the stuff I found at the market was spotty, and anyway, (gripe alert!) I like challenging myself to make salads that don&#8217;t hinge on leaves that are only in season a very small fraction of the times of the year people insist you should eat them. (End gripe.) I used a butternut squash instead of a pumpkin because they seem to roast up in cubes better, and also because they&#8217;re a much easier shape for my little sherpa to hold in his lap (and only <i>occasionally</i> <a href="http://www.flickr.com/photos/smitten/5121201852/">gnaw on</a>) as we head home from the market. I added toasted butternut squash seeds because I love some crunch with my salads and do hope you know they toast up almost as delightfully as pumpkin seeds. Finally, I used black lentils because that&#8217;s what I had in my pantry and what&#8217;s prettier in the last week of October than a black and orange medley?</p>

I keep promising you all some quick, easy recipes but sharing instead a <a href="http://smittenkitchen.com/2009/10/silky-decadent-old-school-chocolate-mousse/">mousse</a> that requires at least five bowls and an electric mixer that must be washed down no less than three times, a <a href="http://smittenkitchen.com/2009/10/quiche-lorraine/">quiche</a> that has at least three different components, <a href="http://smittenkitchen.com/2009/10/cauliflower-with-almonds-raisins-and-capers/">cauliflower</a> that demands you cook each ingredient separately and a from-scratch <a href="http://smittenkitchen.com/2009/10/apple-cider-doughnuts/">doughnut recipe</a> that entails reducing, rolling, freezing, frying <i>and</i> dipping. I have no doubt that you&#8217;re standing out there in front of your monitor, hands on hips, demanding answers. Except I don&#8217;t have any logic or rationale that will explain I choose to use my limited free minutes of time to make elaborate recipes and not, say, dinner, I only have this one peace offering today.</p>

<p>There&#8217;s a caveat, however. This is a ridiculously quick recipe <i>if you have a microwave</i>. We used to but don&#8217;t any longer so it still took over an hour, but it&#8217;s an hour that requires only a few minutes of hands-on time. Still, it is my favorite preparation of spaghetti squash, not only because it is delicious but because it approaches winter squash in my favorite way: by waking it up. I&#8217;ve never had a taste for squash recipes with cream or sugar or piles of cinnamon; I think the natural sweetness of squash is best contrasted with bolder ingredients, like <a href="http://smittenkitchen.com/2009/01/warm-butternut-squash-and-chickpea-salad/">garlic and tahini</a>, <a href="http://smittenkitchen.com/2008/10/acorn-squash-quesadillas-tomatillo-salsa/">jalapenos</a>, <a href="http://smittenkitchen.com/2009/01/squash-and-chickpea-moroccan-stew/">olives and preserved lemons</a>, <a href="http://smittenkitchen.com/2006/10/unflinchingly-good-things/">chile-lime vinagrettes</a>, <a href="http://smittenkitchen.com/2007/11/black-bean-pumkin-soup/">hearty beans and ham</a> or <a href="http://smittenkitchen.com/2007/10/butternut-squash-and-caramelized-onion-galette/">cayenne-dusted caramelized onions</a>. I think you get the picture.</p>

I&#8217;ve confessed again and again that I&#8217;m just not the kind of person who likes to eat things repeatedly. What&#8217;s bad for, I don&#8217;t know, <i>using up leftovers</i>, however, is good for having the kind of site that updates three times a week with new recipes. So I&#8217;d say it all evens out. But every so often, actually &#8212; way too rarely, rarely &#8212; I hit on something that I cannot stop eating. For weeks, months. And now, we&#8217;re over a year and I&#8217;m telling you, if I had a butternut squash at home right now, we&#8217;d already have dinner made.</p>

<p>I&#8217;ve <a href="http://smittenkitchen.com/2008/02/three-from-the-files/">mentioned this salad before</a> but I realize that this is one of those recipes I&#8217;m going to refresh as often as I can get away with. The second I had these ingredients together &#8212; lemon, tahini, butternut squash, garlic, chickpeas &#8212; I couldn&#8217;t believe it was the first time. They were made to be together, and in the times that I&#8217;ve had them apart in other recipes, I always know what they&#8217;re missing.</p>

Our first night in Paris in October, we <a href="http://smittenkitchen.com/where-we-ate-in-paris/">had dinner at a great, inexpensive Moroccan restaurant</a> in the 3&#232;me called Chez Omar. The specialty is couscous, and the various stews you ladle over it. Alex had the chicken, I had the vegetables, but I hear we really missed out on the Royal, which is <a href="http://chezchristine.typepad.com/chez_christine/2005/10/couscous_revela.html">a big mess of meat</a>. Served family style, the food was unpretentious, light and so healthy, I made a mental bookmark to try my hand at it when I got home.</p>

<p>Which, being me, I promptly forgot about. What jogged my memory was a version of a Moroccan vegetable stew on <a href="http://www.treasuresofmorocco.com/moroccan-tagine-cookware-couscousier-c-22.html">Ask Aida</a> on the Food Network last week. I think that Moroccan cooking can be intimidating: I don&#8217;t have a <a href="http://www.amazon.com/gp/product/B001IKK2EK?ie=UTF8&#038;tag=smitten-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=B001IKK2EK">1 3/4-Quart Le Crueset Cast Iron Moroccan Tagine in Caribbean Blue</a> for the low price of $200, nor do I have one I picked up for $2.95 at the central souk in Marrakesh in 1968. (Okay, I wasn&#8217;t even alive in 1968 but for some reason, everyone but me seems to have a story about something fabulous they bought there when backpacking across the world and I am jealous.) I also don&#8217;t have a <i>couscousier</i>, yet astoundingly, I was able to pull off this squash and chickpea stew for dinner on Sunday, and it was delicious.</p>

But if there could be room in your gullet for one more pumpkin love &#8212; perhaps even as a last minute, the-heck-with-pie, Hail Mary pass of a Thanksgiving meal dessert &#8212; I think that these wee cakes are a worthy cause.</p>

<p>So many pumpkin cakes and loaves and muffins are heavy, playing off the dense qualities of pureed squash, and the deep, warm spices we like to eat them with. But these cupcakes &#8212; originally envisioned as a two-layer cake I believe my sister is frosting right! now! &#8212; are light. They still taste of pumpkin but not aggressively so. And the maple cream cheese frosting, my word, is so heaven sent, you can see I got a little carried away prettying it up.</p>

Is pumpkin pie as we know it broken? This is what I was asking myself at 10 p.m. last night as I had words I will only express in asterisks going through my head as I was in my twentieth minute of trying to push a pumpkin pie filling through a very fine mesh strainer.</p>

<p>The source of the recipe, as some of you may have guessed by now, was the November 2008 issue of Cook&#8217;s Illustrated, wherein seeking to make a more complex and less grainy pie, those clever people up in Vermont came to a few conclusions. Swapping out some pumpkin puree with canned yams resulted in a better pumpkin flavor, as did concentrating the flavor by cooking the filling on the stove top before filling the crust.  They also found that a mix of a higher and lower baking temperature kept the pie&#8217;s custard from curdling (making the filling a bit coarse). And then they found that passing the filling through a fine mesh strainer resulted in a less grainy filling.</p>

When I first saw this recipe on the homepage of marthastewart.com last month, my first thought was &#8220;ooh, how perfectly fall!&#8221; but then a second later, &#8220;wait, this can&#8217;t be right.&#8221; I mean, chocolate and pumpkin together? I have to admit, it sounds off to me.</p>

<p>In my overly-analytical head, pumpkin goes with nutmeg and cinnamon and ground ginger and pecans and bourbon and cream cheese and gingersnaps; chocolate, however, goes with a whole different slew of things, like scraped vanilla beans and walnuts or mint or peanut butter or cream cheese and maybe occasionally some chipotle powder. They&#8217;re different, you see, different, different, different.</p>

A few weeks ago (oh, you didn&#8217;t think that meant I was <a href="http://smittenkitchen.com/2008/10/twice-baked-shortbread-other-lost-recipes/">all caught up</a>, did you?) a friend and I went to a cooking demonstration at a great little modern Mexican restaurant named <a href="http://www.brguestrestaurants.com/restaurants/dos_caminos_third_avenue/index.php">Dos Caminos</a>. I know very close to nothing about Mexican cooking, despite adoring the flavor palate&#8211;the sour and tangy citruses against smoky peppers and hearty beans and meats and seriously, I don&#8217;t know why it has taken me so long to try to learn a few new things. Chalk it up to intimidation.</p>

<p>The focus of the demonstration was on fall meals, which was particularly awesome because I think we largely associate Mexican cooking with warm weather, a la pico de gaillos and fresh corn everything. I learned a ton. Like, did you know that Mennonites brought cheese to Mexico and that muenster is a great cheese to use in quesadillas? Did you know that tomatillos are the same family as potatoes? Seriously, I was just swimming in information.</p>

Roasted Acorn Squash and Gorgonzola Pizza
Adapted from Giada DeLaurentis
Yield: 4 side dish servings
1 (1- pound) acorn squash
2 tablespoons maple syrup
1 tablespoon olive oil
1 teaspoon red pepper flakes (we used 1/2 tsp. and it had plenty of kick)
1/4 teaspoon salt, plus 1/4 teaspoon
1/4 teaspoon freshly ground black pepper, plus 1/4 teaspoon
1 pound pizza dough

All right, this is just not pizza. I mean, maybe it is pizza-like or pizza-esque or even pizza-ish, but I have a terrifically hard time calling it pizza. In fact, when I saw Giada DeLaurentis make this on her Food Network show last weekend (I seem to have broken <a href="http://smittenkitchen.com/2008/01/rigatoni-with-eggplant-puree/">a seal with her</a>, no?) all I could think was &#8220;that&#8217;s not pizza!&#8221; and then hmm, that would be a fun Sunday night dinner. So, I did the only rational thing: I decided to not call it pizza. In fact, as soon as I started to think of this as a flat bread, an open panini or an assembly of some of my favorite things, the deliciousness near-overwhelmed me.</p>

<p>So, let us take this apart, shall we? We start with a thin layer of pizza dough. You can use my <a href="http://smittenkitchen.com/2007/01/pizza-and-the-limits-of-diy/">easy-as-sin one</a>, though I have myself moved onto the just as easy <a href="http://smittenkitchen.com/2007/09/pizza-even-sweeter/">wine-and-honey version</a> I updated a few months back. If you don&#8217;t feel like making your own, I&#8217;m really not doing my job here, but nevertheless, feel free to pick up one from your local pizza joint (what, you don&#8217;t have one on your block?) or grocery store. The recipe calls for a one-pound dough, though my homemade one clocked in at 13.5 ounces and, lo, the world did not end. </p>
