Where have I been, you ask? Did I fly off to a <a href="http://smittenkitchen.com/2012/03/multigrain-apple-crisps/">small Caribbean island</a> again, only to return to rub it in? Did my <a href="http://smittenkitchen.com/book/">book project</a> or <a href="http://www.flickr.com/photos/smitten/6837195826/">adorable distraction</a> eat me alive again? For once, no. I have actually been out climbing another (<a href="http://smittenkitchen.com/2012/02/lasagna-bolognese/">slightly smaller</a>) culinary Mount Everest for you, and I have returned bearing not one, but two recipes.  </p>

<p>I&#8217;ve been wanting to make potato knish almost as long as I&#8217;ve had this site. I thought I&#8217;d finally tackle it this winter, when carbs-for-warmth are the order of the day but New York up and decided to not have a winter this year and so it was a 60 degree day or never. I&#8217;m glad I went with it as knish are quintessentially old New York, brought to the Lower East Side tenements by Jewish Eastern European immigrants who knew, like most of our forefathers did, how to stretch staples into belly-filling delights. </p>

I have this affliction or maybe you could call it a fixation with latkes. And I know you&#8217;re probably thinking, potato pancakes? With shredded onion? They&#8217;re good, but are they really worth obsessing over? But you&#8217;d be using the literal definition of latkes and to me, latkes are not so much a singular recipe with a finite ingredient list but an <i>approach</i> to pancakes; an approach that could include anything that can be shredded and fried. And oh, when you start from this vantage point, they most certainly will.</p>

<p>I&#8217;ve made potato latkes, sure. <a href="http://smittenkitchen.com/2008/12/potato-pancakes-even-better/">Many times</a>, even. But then I made <a href="http://smittenkitchen.com/2006/11/throwing-pancakes-to-the-wind/">mixed vegetable latkes with Indian spices</a> and curry-lime yogurt. I made <a href="http://smittenkitchen.com/2010/11/apple-latkes/">apple latkes</a>, replete with a caramel sauce made from the juice you wring from the shredded apples. (I waste nothing in the kitchen. My grandmother would be so proud!) This past summer, I made <a href="http://smittenkitchen.com/2011/08/zucchini-fritters/">zucchini fritters</a> to solve a dinner crisis. And now, there&#8217;s this: Parsnips. Potatoes. Dill. Horseradish. Lemon juice.</p>

I admitted somewhere in the comments last week that I&#8217;d all but abandoned making my own pumpkin puree these days, baking instead with the always-reliable canned stuff. I think that as home cooks, it&#8217;s our tendency to want to do anything and everything that can be from scratch as such, but that I&#8217;d never been satisfied with the labor versus outcome balance of roasting pumpkin. To get a dreamy texture like one from canned pumpkin, I found I often had to roast, then puree, then sometimes cook briefly on the stove to thicken it up and often, still found the flavor inconsistent, sometimes delicious, often a little lackluster.  I know, I just put you all to sleep. I promise, there is unapologetic goofiness ahead.</p>

<p>What I didn&#8217;t get into was my current obsession &#8212; putting sweet potato where you&#8217;d expect pumpkin. With the arrival of <a href="http://www.flickr.com/photos/smitten/6385486035/in/photostream">this guy</a>, roasted sweet potatoes are in a near-constant rotation and so it was only a matter of time before they <a href="http://smittenkitchen.com/2010/11/sweet-potatoes-with-pecans-and-goat-cheese/">showed up</a> <a href="http://smittenkitchen.com/2009/11/sweet-potato-buttermilk-pie/">everywhere</a>. Whether I buy sweet potatoes from a Stop &#038; Shop by my parents house or the bottom of a dusty crate at a farmer&#8217;s market on 2nd Avenue, is a remarkably consistent creature of the underground. I roast them for 45 minutes (which makes my apartment smell like bubbling sweet potato caramel, i.e. heaven), let them cool, then peel and run them through a potato ricer and have perfectly textured and flavored purees every single time. This year I&#8217;ve been on a huge sweet potato baking kick: pies, pancakes, breads and now this, biscuits.</p>

I think that if we&#8217;re going to continue to be grand old friends, you&#8217;re going to have to admit that you at least occasionally wish you could have potato salad for lunch any day of the week. That you think it&#8217;s kind of lame that potato salad is relegated to backyard barbecue indulgence; packed up in Tupperware, saved for 3-day weekends, eaten with apology to the swimsuit you&#8217;ll wear the next day. If nothing else you might admit this so that I can feel my habits are less cuckoo. You&#8217;d do that for me, wouldn&#8217;t you?</p>

<p>And of course, I&#8217;ve been craving potato salad like a madwoman for the last week and who can blame me? Summer Is Coming* and picnic season is nigh. But given my need to not groan any further when bathing suits are required, I wanted to swap the standard mayo-assaulted potato salad for something with different proportions &#8212; a salad <i>with potatoes</i>, rather than a straight-up potato salad.  I let the market dictate what to fill the salad out with &#8212; this week in New York is all about asparagus, sugar snaps, radishes and spring onions, and so is this salad, but in another month, I think it would be equally welcome with some cucumbers and green beans.</p>

<p>I fell for a photo this week. It was on marthastewart.com and it looked like an accordion, or maybe a <a href="http://www.poof-slinky.com/">Slinky</a>, of thinly sliced, crisped potatoes and my brain computed this as CHIPS. POTATO CHIPS MASQUERADING AS GROWN-UP SIDE DISH. MUST MAKE POTATO CHIP CASSEROLE (I was kind of like <a href="http://hyperboleandahalf.blogspot.com/2011/04/wild-animal-simple-dog-goes-for-joy.html">this dog</a> here) and although further investigation of the recipe unveiled no actual use of potato chips, creamed canned soup or anything also that would really allow it to be titled a Potato Chip Casserole, it was too late and I was making it anyway.</p>

<p>Plus, I was looking for a gratin alternative for potatoes for my family&#8217;s Seder on Monday night and this fit the bill perfectly. It&#8217;s not that I don&#8217;t like, nay <i>love</i>, any excuse to drown potatoes in cream and butter and swaddle them in a blistered cheese lid, but given that there was already going to be a spread, it didn&#8217;t seem necessary that the potatoes be so over-the-top.</p>

We&#8217;re on day two of something called a &#8220;wintry mix&#8221; which I suspect if I lived in one of those places where one was forced to wear shorts and sunglasses in January, eating food plucked recently from the ground (<a href="http://mattbites.com/2011/01/18/sauteed-pea-tendrils-hello-spring-youre-early/">pea tendrils</a>, anyone?) I&#8217;d imagine constituted a fun day of mixed winter activities, like snowfall fights followed by ice skating and then, if you&#8217;re not too tuckered out, some hot cocoa before you head home. Alas, a &#8220;wintry mix&#8221; is the precise reason my only current goal in life is to flee to someplace tropic and sandy.</p>

<p>And make soup. Except, me and soup have been on unstable terms this year. I know its the &#8220;right&#8221; thing to eat this time of year but my relationship with soup has been near-irreparably damaged by too many bowls of vegetables boiled to death in an oversalted broth, soups assaulted with so much cream that whatever healthy things in there cannot be tasted, and in what I imagine had to have been some sort of practical joke, a soup I ordered from from a cafe a few weeks ago that tasted, smelled and sloshed about like freezer-bitten spinach pureed in water. (It cost $6.95.)</p>

This is the kind of thing you come up with when you have a one year-old who, like many one year-olds, wishes to eat sweet potatoes with every meal. Sure, the goal is for the kid to eat exactly what the rest of the family is eating for dinner, but there are only so many days in a row we can feign excitement over a side of sweet potatoes and I have only so much heart to deny the kid something he delights in. And so I spent a good part of September and October roasting sweet potatoes, repeating the task enough times that I made two great discoveries.</p>

<p>The first discovery came about through laziness. Tired of slicing thin pieces and laying them out over two trays, one day I cut very thick rounds that would fit on one tray and discovered that like steak, if you want three layers of texture (two satisfyingly firm exteriors and a soft center), you want a thick piece, high temperatures and to flip your &#8220;steaks&#8221; halfway through for even cooking.</p>

I bought the prettiest little &#8220;freshly dug!&#8221; (I could not resist this sign) red potatoes at the market last week. They&#8217;re sweet, creamy and cute and need almost nothing to make them welcome on any table &#8212; roasted with olive oil, salt and pepper or boiled until tender and tossed cold with a vinaigrette, they&#8217;re heaven.</p>

<p>But if I were the kind of person who even knew when to leave well enough alone, what would we ever have to talk about? And so I sifted around my endless lists of things I think I might want to cook and landed on what has to be the most pretentious recipe I&#8217;ve ever read. I&#8217;m know, I really should just focus on the positive (and I will, soon) but <em>seriously</em>: instead of water in the pastry crust, it calls for San Pellegrino, and instead of butter, it calls for Plugr&#225;, an ultra-creamy European butter. Here I had been operating under the assumption that the goal of recipes were to encourage home cooks, not discourage those who don&#8217;t keep imported Italian mineral water around for pie doughs, silly me. Harrumph!</p>

A few times a year, I go on a Dinner Intervention, which might sound a little more gentle than it is. It sounds like a &#8220;Honey, I was thinking I&#8217;ll do something different with dinner this week&#8221; but in reality it is more of a &#8220;Gah, I am so sick of take-out and fobbed together meals! I&#8217;ve had enough!&#8221; wherein I throw down the proverbial spatula and demand we do better. </p>

<p>Dinner is not my strong suit; I love side dishes and &#8220;tapas-style&#8221; meals (a joke consisting of bits and pieces of leftovers from the fridge meals.)  I&#8217;ve got pancakes, slaws and potatoes down pat, but when it comes down to what I consider the Holy Grail of home cooking &#8212; Getting Dinner On The Table with any regularity &#8212; I fall woefully short. Seeing as we can get great salads, hummus platters and cracker-thin pizzas delivered in no time, why would I want to bother cranking up the broiler?</p>
