One of the things I&#8217;ve been fiddling around with last year is the idea of making bruschetta without, you know, bread. I shared a <a href="http://smittenkitchen.com/2010/11/sweet-potatoes-with-pecans-and-goat-cheese/">Thanksgiving-inspired version</a> last November, but was itching for a late summer spin on it when I created this. I&#8217;m the kind of person who would happily eat appetizers for dinner any day &#8212; I&#8217;m pretty sure if I had nobody else to feed, I&#8217;d have subsisted on nothing but <a href="http://www.google.com/#sclient=psy&#038;hl=en&#038;source=hp&#038;q=pan+con+tomate&#038;pbx=1&#038;oq=pan+con+tomate&#038;aq=f&#038;aqi=g1&#038;aql=&#038;gs_sm=e&#038;gs_upl=743l3351l0l3602l14l11l0l3l3l3l842l4483l2-1.1.1.2.3l8l0&#038;bav=on.2,or.r_gc.r_pw.&#038;fp=67cca108e1ea2034&#038;biw=1280&#038;bih=670">pan con tomate</a>, blistered padrons, pink wine and Gossip Girl season one reruns the entire month of August &#8212; but it doesn&#8217;t really cut it with a family of three. </p>

<p>Instead, I spend a lot of time throwing things together for the sake of being a grown-up, a grown-up who doesn&#8217;t really have an excuse (such as, she hates cooking or doesn&#8217;t know how to cook, etc.) not to make dinner but still forgot to make it again, and quite often, these meals involve some element of <s>roasting the bleep out of well-seasoned vegetables</s> high heat cookery. For the <a href="http://www.flickr.com/photos/smitten/6128716533/in/photostream">kid</a>, that usually suffices but we grownups get bored more easily, and it&#8217;s from that boredom that I started making small, finely chopped and loudly flavored salads and spooning them on top of my roasted vegetable du jour. In this case, it&#8217;s eggplant with a Mediterranean-ish topping. We found it completely addictive and less heavy somehow than eating the same on pieces of toast.</p>

I&#8217;ve been doing a spectacular amount of hemming and hawing over this post. There&#8217;s the, &#8220;Is it too late to talk about eggplants and tomatoes?&#8221; question, as it is well into October and eggplants are so&#8230; late summery. But there are still a ton of eggplants and tomatoes at the markets, likely due to this warm fall we&#8217;ve been having. Although they may not be the perky specimen that first appeared in August, they are absolutely perfect for soup. Then there&#8217;s the &#8220;Ugh, SOUP&#8221; issue wherein I have to admit that I find soup kind of dull. Sure, I&#8217;ve got a slew of <a href="http://smittenkitchen.com/recipes/#Soup">soup recipes in the archives</a> that I find interesting, but still, the vast majority of soups out there to be either too salty, too watery, cream bombs (I&#8217;d rather save my heavy cream to top pie, thank you very much) or to taste like limp, boiled vegetables. And finally, there&#8217;s the fact that this soup is excellent the way it is but with endless potential for tweaking, and who wants a slightly unfinished recipe? But then, thank goodness, I said this to myself: &#8220;Zzzzz!&#8221; and also &#8220;pbbbblt!&#8221; Because if I put myself to sleep with all of this hand-wringing, I can only imagine how few of you will make it past paragraph one.</p>

<p>So here&#8217;s how this soup began: My mother gushed a couple weeks ago about an eggplant soup from, of all places, a casino in Atlantic City. Eggplant soup! At a casino! Worth talking about! Who knew? And so I dug through my recipe bookmarks and found one from an old Bon Appetit that sounded just right, with a few steps that would save it from many of the aforementioned soup evils. By roasting the eggplant, tomatoes, garlic and onion first, you&#8217;d deepen their flavors before throwing them in a stock bath. And although the original recipe called for a whole cup of cream, the head notes suggest you can skip it entirely, although I had no desire to do a silly thing like that. In my experience, it only takes a modicum of cream to make a soup taste especially lush, and that cream can go a long way towards anchoring the flavors that otherwise get a little lost in the &#8230; slosh of it all. Too much cream, and the flavors are held at a distance while you drown in richness, and I&#8217;d much rather save that for Things That Involve Cheese Or Chocolate.</p>

When it comes to bruschetta, I don&#8217;t know why tomatoes get all the love. Right next to them at the market, eggplant is sulking&#8230; or at least I&#8217;d be if I always got stiffed in the Breezy Light Summer Appetizer with Wine department by my fruity field buddies. I got thinking about an eggplant topping for garlic-rubbed, olive oil drizzled toasts last week when I was still on vacation and had nothing but the ocean&#8217;s horizon to consider for entire <i>minutes</i> of the day when this constantly-in-motion <a href="http://www.flickr.com/photos/smitten/4912470103/">11 month-old</a> rested his eyes for a but all I knew is what I didn&#8217;t want: a puree, because while there are many great ones, there&#8217;s just so much gray and heavy about them and I didn&#8217;t want it to need tomatoes to make it work because hey, I love tomatoes but was insistent that eggplant can be awesome on its own.</p>

<p>It wasn&#8217;t until I was back in my kitchen this week (reunited with my <a href="http://smittenkitchen.com/2010/08/sweet-corn-pancakes/">very sharp knives</a>) that I started puttering around with what I had on hand &#8212; namely some stragglers leftover from the previous week&#8217;s farmer&#8217;s market fest, some crumbly feta and purple scallions &#8212; to make the toasts happen. I roasted the eggplant, doused it with red wine vinegar, tossed everything together and piled it on toasts and this, <i>this</i> is the kind of mid-summer snack I want with my glass of wine. Oh man, I almost typed whine. Being back from vacation has been rough.</p>

I suspect most of you think it has been pretty quiet around here because we&#8217;re crazed, sleep-deprived and wholly consumed with nuzzling <a href="http://smittenkitchen.com/2009/09/look-what-we-baked/">squishy baby cheeks</a> and, well, you wouldn&#8217;t be completely off-mark, minus the crazed part. But mostly it has been quiet around here because we&#8217;ve been trying to use any downtime we can spare to take Jacob out as much as possible, as much to maintain our own sanity as his. And let me tell you, this two-week old has been everywhere: <a href="http://www.ess-a-bagel.com/">Ess-a-Bagel</a>, <a href="http://www.flickr.com/photos/smitten/3972867616/">The Doughnut Plant</a>, <a href="http://www.flickr.com/photos/smitten/3972099277/">The Pickle Guys</a> and today he even made it to the <a href="http://www.shakeshacknyc.com/">Shake Shack</a>. He&#8217;s been to two parks, been carted around with <a href="http://www.flickr.com/photos/smitten/3972867868/">countless cups of coffee</a>, caught a <a href="http://www.flickr.com/photos/smitten/3967803422/">first fall leaf</a> and even hit a farmers market, where he attempted to make off with an eggplant before we intervened. Who knew 11-day olds could already have such wayward ways?</p>

<p>I can&#8217;t tell you how happy these little burst of fresh air make us, not only because I&#8217;m really impatient about not being allowed to exercise for four weeks or swim for six (!) but walking is deemed safe, but because this is kind of exactly how I hoped it would be. I spent a lot of time this summer waddling around the different Greenmarkets (&#8220;scaring the locals&#8221; as I&#8217;d call it, as people seemed uneasy to see a 9 million months pregnant woman out sniffing produce, and not home with her feet up and her spoon buried in a pint of Haagen-Dazs) and imagining how much fun it would be to do the same with our baby. &#8220;We can&#8217;t wait to take you <I>everywhere</i>&#8221;  I&#8217;d say to my stomach (no doubt giving the people around me more reason to look uncomfortable) as I stuffed eggplants, tomatoes and zucchini in my shopping bag.</p>

A few months ago, a friend called to say that she was telling her office mates about how I love to grill pizza and they set to searching for my recipe on this site and couldn&#8217;t find it. <i>Gulp</i>, I said, I&#8217;ve just never written it up!  From that day forward, I made it my Summer Priority to walk you through pizza on the grill, but I have failed at each turn. Either we&#8217;ve made the pizza too late in the evening and the pictures came out <a href="http://www.flickr.com/photos/smitten/3565762150/in/set-72157607068325843/">anything but appetizing</a>, or the day I decided to try again, it has rained. Seriously. If you want thunderstorms to suddenly threaten, let me promise to make you grilled pizza for dinner.</p>

<p>Last night was the final straw, or the day I finally threw my hands in the air and declared that a proper introduction to grilled pizza will probably have to wait until next summer. (Fortunately, Jen and Dietsch at Last Night&#8217;s Dinner won&#8217;t make you <a href="http://www.lastnightsdinner.net/2009/08/10/finally-grilled-pizza-the-dough/">wait</a> <a href="http://www.lastnightsdinner.net/2009/08/11/grilled-pizza-getting-saucy/">that long</a>.) I have had this grilled eggplant and olive pizza on the agenda even since I spied it in this month&#8217;s Gourmet and knew that it immediately needed to <i>get in my belly</i>. Four days later (a typical time lag these days from &#8220;idea&#8221; to &#8220;execution&#8221;, sadly) I had the ingredients amassed, the energy to give it a try and even a friend&#8217;s yard to grill in, thus of course, the weather went downhill. But I persevered, climbing into the far reaches of our linen closet where we stash kitchen stuff that doesn&#8217;t get much use (whispering hello to my 12-inch wedding cake pans and canneler molds), unearthing my <a href="http://www.amazon.com/gp/product/B000MPR1ZU?ie=UTF8&#038;tag=smitten-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=B000MPR1ZU">cast iron panini pan</a> (hey, close enough, right?) and setting to grill to my heart&#8217;s content, weather be damned.</p>

Seeing as I am never short on opinion on anything&#8211;most especially when it comes to <a href="http://smittenkitchen.com/2006/08/the-abhorred-and-the-adored/">many </a><a href="http://smittenkitchen.com/2006/12/holding-the-gray-salt/">Food</a> <a href="http://smittenkitchen.com/2007/12/chocolate-pretzel-cookies/">Network</a> <a href="http://smittenkitchen.com/2006/08/barbeque-agnostic/">chefs</a> that so often grace my television set, Alex calls the Sunday noontime shows my &#8220;stories&#8221;&#8211;I can&#8217;t believe I haven&#8217;t previously said a single word about Giada DeLaurentis. Let me redress that right now: I really want to like her&#8211;and no, not in the way that my husband does (busted!). I&#8217;ll see her cooking something and it always looks <i>pretty</i> good and like it <i>could</i> be tasty, but never, and I mean ever, do I feel any great need to cook the recipe for myself.</p>

<p>I think what it comes down to is that all of her recipes seem to be missing a little something, something that would make it more interesting. Like, you made pesto and added a swapped out a little mint for basil? Whoa. Where&#8217;d you come up with that! You add crushed almond cookies over an ice cream sundae to give it an &#8220;authentic Italian flavor&#8221;? I&#8217;m bowled over, here. But less sarcastically: does this actually improve it, or just make it different?</p>

When I made my version of <a href="http://www.smittenkitchen.com/2007/07/rat-a-too-ee-for-you-ee">baked ratatouille</a> back in July, I had intended to follow up with suggestions of other things you could do with leftovers, or leftover ingredients, as I always have leftover components but have not yet found a store that will sell me two-thirds of one zucchini and a half an eggplant. I really hate having a quarter eggplant leftover, because I&#8217;m very unlikely to use it and incapable of throwing it away, so what usually happens is I stash it in the fridge where it gets forgotten about, rots, is found a month later as when I scream in horror and throw it away afterall, having flashbacks to that time I lived with three friends and we were cleaning out the fridge and found something completely awful way in the back and Dave said &#8220;sorry, that was my kiwi&#8221; and I was like, &#8220;uh, that&#8217;s a lemon.&#8221; </p>

Tell me I&#8217;m not alone in this: You saw <a href="http://www.pixar.com/featurefilms/rat/">Ratatouille</a>, fell in love with Remy (though you still jumped a foot in the air when you saw a significantly less-charming rodent scamper across your path on the way home) and found yourself with a pressing craving, not for the heavy and too-often soggy traditional Proven&#231;al ratatouille, but that kaleidoscope of spiraled colors they served to the haughty and (spoiler!) soon-humbled restaurant critic. </p>
<p>I can&#8217;t believe how well this worked out. I also can&#8217;t believe I cooked a cartoon dish created by an imaginary rat. But I can believe I&#8217;ll be making this again tomorrow, because it&#8217;s delicious, seasonal, and an incredible cinch to make. </p>

I don&#8217;t know if the name for this affliction is procrastination&#8211;hey, it wouldn&#8217;t surprise me in the least, she says, eyeing the sinkful of last night&#8217;s dishes&#8211;but when I need to get things done, I have this bad habit of doing them either right-that-very-moment or pretty much never. When I return from a vacation, I either get every single thing out of that suitcase and into its proper closet or hamper within twenty minutes, or it sits on the floor of the bedroom for weeks, as it has since we&#8217;ve returned from <a href="http://smittenkitchen.com/2007/03/savh">Charleston</a>. I return a garment I&#8217;ve changed my mind about the very next day, or it sits in a bag, as has a certain Banana Republic blouse, for six (cough, eight) months, my husband looking pointedly at it and then back at me often enough that I just downright ignore that too. Once something leaves my short-term memory, it may as well be lost for good, but in recipes at least, today I am on a rescue mission. </p>

<p>You know, I&#8217;ve never been one to malign <a href="http://smittenkitchen.com/recipes#Vegetables+Beans">vegetables</a> or healthy food, but I think that&#8217;s exactly what&#8217;s happened here. I don&#8217;t dive into posts about them the way I do with cakes, frosted, sprinkled, rolled, yeasted, basted, braised and pressed things; the more everyday stuff always ends up backlogged, and then accidentally forgotten. And it&#8217;s a shame, because if I had more of this Mediterranean Eggplant and Barley Salad right now, I&#8217;d eat it for lunch and then dinner again. </p>
