I hadn&#8217;t meant for this soup to be so quintessentially early January &#8212; that would be, virtually fat free, dairy free, gluten free (miso dependent), vegan and the very picture of healthful do-gooding. It&#8217;s about one cube of tofu away from earning a halo or at least being surrounded by singing <a href="http://www.flickr.com/photos/smitten/6624375687/">cherubs</a>. In fact, if you advertised a soup to me with all of those qualities, I&#8217;d probably run in the other direction because I am a dietary heathen, and I love butter, even if overdoing it in December now requires it in moderation. For the rest of time.</p>

<p>In fact, the reason why I made this soup is because, in general, I don&#8217;t find carrot soups all that interesting and wanted to challenge myself to make one I&#8217;d love, and eat often. I turned to one of my favorite dressing recipes for inspiration &#8212; the <a href="http://smittenkitchen.com/2010/04/avocado-salad-with-carrot-ginger-dressing/">ginger-carrot-miso awesomeness</a> most of us know from sushi restaurants &#8212; and decided to mash up a miso and carrot soup. </p>

There&#8217;s nothing better than a recipe that gives you a feeling of promise, especially when it involves something as mundane as carrots. Yes, <i>carrots</i>. I mean, just when I thought I&#8217;d done everything worth doing with carrots &#8212; shredding them into <a href="http://www.davidlebovitz.com/archives/2008/07/carottes_rapee.html">my favorite carrot salad</a>, <a href="http://smittenkitchen.com/2008/01/pickled-carrot-sticks/">pickling them</a>, <a href="http://smittenkitchen.com/2009/08/roasted-carrot-and-avocado-salad/">roasting them for an avocado salad</a>, <a href="http://smittenkitchen.com/2010/04/avocado-salad-with-carrot-ginger-dressing/">grinding them into a ginger dressing</a>, grating them into <a href="http://smittenkitchen.com/2006/11/throwing-pancakes-to-the-wind/">Indian vegetable pancakes</a> &#8212; a reader (Hi, <a href="http://sasasunakku.com/">Sasa</a>!) came along, emailed me her favorite carrot recipe and with one look, I knew exactly what my carrot routine was missing.</p>

<p>It turned out to be a lot of things (fortunately, none of them were <a href="http://www.flickr.com/photos/smitten/4616520254/">striped socks</a>), actually, but small things: paprika, caraway, cumin, harissa, mint, garlic, parley and also feta. The carrots are grated, the spices are heated with a pinch of sugar in olive oil, whisked with lemon juice and poured warm over the carrots, with minced mint and parsley &#8212; think North African pesto. You let the flavors muddle for a bit and then you add feta. And I know this is when I should say &#8220;You can eat it with lamb! At a picnic! With skewers off the grill and pitas!&#8221; But honestly, I just ate it with a fork. Because this salad is fascinating.</p>

A few weeks ago, a commenter (hi, Kate!) tipped me off to the Avocado Salad with Carrot-Ginger Dressing in <a href="http://goop.com/newsletter/15/">Gwyneth Paltrow&#8217;s GOOP newsletter</a>. Yes, <i>that</i> Gwyneth Paltrow, from <a href="http://www.imdb.com/title/tt0134630/">Duets</a>! She has a newsletter dedicated to &#8220;nourishing the inner aspect&#8221; which I have to be completely honest, I have no idea what that is and hope that doesn&#8217;t mean I don&#8217;t have one. I&#8217;m also not convinced that I&#8217;m full of impurities and toxins, thus I&#8217;m not really into cleanses and detoxes she discusses in this newsletter and I&#8217;m understandably suspect of borderline-starvation fasts that promise a quick shedding of holiday excess.</p>

<p>But I really love a good avocado salad. And my husband thinks that carrot-ginger dressings are pretty much the best thing ever. He always talks about one he&#8217;d get in college from a place called Around the Clock (it is now a Japanese bakery, next to St. Marks Books) and how he&#8217;d always crave it and how nobody really makes it as perfectly as they did, or nobody before I tried Paltrow&#8217;s version &#8212; &#8220;You got the recipe just right!&#8221;</p>

As it turns out, it has been <a href="http://smittenkitchen.com/2007/09/an-elaborate-ruse/">nearly two years</a> since I attempted to recreate a carrot salad I&#8217;d had at <a href="http://www.thespottedpig.com/">The Spotted Pig</a>, completely lost interest in it halfway through the cooking process, burned dinner and went out for a fairly forgettable dish at a nearby restaurant instead. What a shame, right? This salad deserves better than to be passive-aggressively swapped out for noodles and left to collect dust for years.</p>

<p>So let&#8217;s try this again, because it couldn&#8217;t be simpler. You roast carrots with olive oil, salt, pepper and a smidgen of cumin. When they&#8217;re done, you top them with slices of fresh avocado, some squeezes of lemon juice and fresh seasoning. And that&#8217;s it. But this is so much more fun that your standard roasted carrots, ubiquitous alongside every winter roast. I mean, it&#8217;s 85 degrees out, I don&#8217;t need a side of mashed potatoes. No, these are summer roasted carrots, straight from the market, contrasted with fresh ingredients.</p>

<p>Me? I made cupcakes, carrot cupcakes to be specific because carrot cake is Alice&#8217;s favorite. But do you know what I have come to realize about people who say their favorite cake is carrot cake? It&#8217;s really the cream cheese frosting (and perhaps the <a href="http://images.google.com/images?hl=en&#038;q=carrot+cake&#038;btnG=Search+Images&#038;gbv=2">orange and green carrots eloquently piped on top</a>) that they love. Or at least that&#8217;s the case with Alex.</p>

1 pound carrots, cut into 3 1/2- by 1/3-inch sticks
1 1/4 cups water
1 cup cider or plain vinegar (the former makes a sweeter, milder brine)

Seeing that it is a whole eleven days into aught-eight, I&#8217;m going to stagger a guess that you&#8217;re sick of carrot sticks by now. But I don&#8217;t want you to feel bad about it. We all hit that wall between our ambition and the reality that being &#8220;good&#8221; all of the time is no fun from time to time. Hey, some of us walked <i>right past the gym last night</i> and proceeded to go shopping instead. I&#8217;m just saying.</p>

<p>But since carrot sticks are inherently good, and good for you things, I see no reason to throw them out with the resolutions bathwater. Because what if that, uh, bathwater was bright and tangy? What if had a buttery dill vibe? What if it had a kick of garlic? What if you pickled your carrot sticks? If you were me, you would not be able to keep your tongs out of the jar. I had one of those &#8220;oh, let me try one and see how they came out&#8221; moments before I went to work Thursday morning. Then I tried another one. And another. Um, I had pickled carrot sticks for breakfast&#8211;I am gross. But these are not.</p>

3/4 stick (6 tablespoons) unsalted butter, cut into pieces
1 medium onion, halved lengthwise and thinly sliced crosswise
1/2 teaspoon salt
2 lb yellow summer squash, halved and thinly sliced
2 carrots, thinly sliced
1 yellow-fleshed potato (1/2 pound), peeled, halved, and thinly sliced

I find it funny now &#8212; what with my obvious fascination with stirring up <a href="http://smittenkitchen.com/2006/08/a-44-clove-ticket-to-a-happier-place">soups</a> <a href="http://smittenkitchen.com/2006/09/the-fragile-cooking-ego">aplenty</a> &#8212; that a couple years ago I didn&#8217;t care for them at all.  Everything about the taste of vegetables boiled in flavored water until their structures compromised made my stomach turn and to this day, even the liveliest minestrone invokes a bad memory of flavor-sapped herbs and formless noodles. Even those that came close to passing muster were so laden with salt, I&#8217;d find myself aching for a glass of water after a bowl of something that was supposed to be soothing.</p>
<p>I think the turning point came with the Cuisinart Immersion Blender gift from our <a href="http://smittenkitchen.com/2006/07/i-do-salad-pizza-sorbet-and-the-loot-it-rode-it-on">wedding registry</a>. Nobody better describes my affection for it than <a href="http://blogs.salon.com/0001399/2002/09/27.html">Julie Powell</a>: &#8220;Have I mentioned to you that I love love love my handy-dandy cuisinart wand?  I love it the way other women love their vibrators.&#8221; </p>
<p>In one minute flat, it converts everything in the pot into a velvety consomm&#233;, bridging the disparity between ingredients (&#8220;No! I don&#8217;t want to hang out with the icky squash!&#8221; whines the orange-fleshed potato) like a mother insisting her children play nicely together. No more alarming boiled vegetable flavor, no more awkward, thin spaces between ingredients, with each spoonful the same as the last, I find these soups contemplative; a calm brought on by the knowledge that every spoonful will taste the same as the one before. </p>
<p>The pistou, which I was as skeptical of as I had been of the <a href="http://smittenkitchen.com/2006/09/like-the-lettuce">lettuce pesto</a>, really brightened up the fall flavor and color with some spring, kind of like eating an orange soup on an 80-degree September day. </p>
