We spent last weekend in New Orleans. I&#8217;d been invited to be on a panel about recipe development at <a href="http://www.foodista.com/ifbc2011/nola">a lovely conference</a>, and we wove that together with a <a href="http://www.flickr.com/photos/smitten/6106774782/">baby</a>-free mini-vacation for our anniversary weekend. We&#8217;d only been to New Orleans once before, just a couple months before our wedding in 2005, not realizing how strongly we&#8217;d feel connected to the city when our wedding and Hurricane Katrina fell on the same date. Meanwhile, we managed to miss another hurricane &#8212; and her damages &#8212; entirely back home. We&#8217;re lucky people.</p>

<p>When we go away, we always have great plans to walk everywhere and eat freely, hoping to strike a balance. However, that arrangement works out a little better in a city that doesn&#8217;t have the still air and intense heat of a preheated oven &#8212; summer there is no joke! So, we walked slowly and ate immensely. I wanted to tell you about all of it &#8212; the tomato salad with battered Vidalia &#8220;chips&#8221;! the boudin! the po&#8217; boys! &#8212; but when I typed it all together, it was a terrifying thing to behold. I couldn&#8217;t even own up to it on a weblog that <i>extols good eating</i>. [Hint: I had at least four dishes smothered in gravy. In three nights!] But I will tell you about the brunch platter that nearly did me in, and had it, it would have been a fine, fine way to go: eggs, grits, fried green tomatoes, bacon, a giant warm biscuit and the owner&#8217;s own peach butter made to slather upon it. &#8220;You&#8217;re going to have to roll me home from New Orleans!&#8221; I told my husband, after which we vowed to find healthier fare on our final day (but still ended up with a beignet breakfast, muffaletta lunch and then pralines boxed up as gifts. New Orleans is snickering at me right now, I know it is.)</p>

We spent the last week in what I call the vacation trifecta: among beaches, wineries and farm stands. The vacation was supposed to be a reward for getting my <a href="http://smittenkitchen.com/book/">book</a> finished by August 1st. Instead, I all but tried to cancel the vacation when I realized I wouldn&#8217;t be done. Despite all of my practice over the last few months, I&#8217;m not very good at not finishing things. I don&#8217;t like going to bed with dishes in the sink, I&#8217;d rather stay up until midnight getting something done than have to start the morning with an old item on my to-do list and I <i>did not want to go on vacation until I finished my project</i>. Oh no. I did not. I might have even dreaded it.</p>

<p>Thank goodness we went anyway as we had fantastic vacation, I dare say the best one we&#8217;ve had since adding another member to our family. As it turns out, when the baby sleeps (in a bed! in a <a href="http://www.flickr.com/photos/smitten/6042575586/">strange place</a>! like a champ! who is this child and what did he do with Jacob?) on vacation, everyone gets one and it also turns out, when you&#8217;re really on vacation, any and all promises you made to yourself to get some work done go out the window. Thank heavens for that too. Other signs of a good vacation: I didn&#8217;t take many <a href="http://www.flickr.com/photos/smitten/sets/72157627431832496/with/6042582868/">photos</a>. I ignored the stack of recipes I&#8217;d bookmarked for <a href="http://smittenkitchen.com/2011/06/linguine-with-pea-pesto/">Ideal Summer House Cooking</a> (yawn). We went to a different winery every afternoon. I fell asleep with saltwater in my hair on at least three different occasions. I discovered that when my son sings the alphabet, for the P, and the P only, he closes his eyes, reaches his arms wide, tips his head back and belts out a giant &#8220;PEEEEAA!&#8221; I splurged on <a href="http://www.catapanodairyfarm.com/">local feta</a> and started making <a href="http://www.flickr.com/photos/smitten/6042582868/in/set-72157627431832496">crunchy summery salads</a> every night tossed with it and whatever could be diced raw. We had countless ears of corn and at least one lunch of <a href="http://www.flickr.com/photos/smitten/6042570678/in/set-72157627431832496">tomato-corn omelets</a> (have you done this yet? Because I&#8217;m obsessed with them). There was a birthday breakfast for my husband of <a href="http://www.flickr.com/photos/smitten/6042027151/in/set-72157627431832496/">skillet baked French toast</a>. There was an accidental recipe of what I&#8217;m now calling <a href="http://www.flickr.com/photos/smitten/6042039959/in/photostream">sugar steaks</a>, and making intentionally. Two batches of dry-rub ribs (a twist on <a href="http://smittenkitchen.com/2008/05/mollys-dry-rubbed-ribs/">Molly&#8217;s rub</a>, <a href="http://smittenkitchen.com/2010/07/sweet-and-smoky-oven-spareribs/">McGee&#8217;s</a> technique) in the oven, because it&#8217;s so, so easy that way. And my future fall obsession came to me early at our daily jaunts to the <a href="http://northforktableandinn.com/the_lunch_truck/">North Fork Table &#038; Inn Food Truck</a>: chicken posole. It was amazing; I promise to try to recreate it soon.</p>

Look, it wasn&#8217;t my finest moment but my Happy Valentine&#8217;s Day gift to my husband was an <i>epic meltdown</i> over <a href="http://smittenkitchen.com/book/">book</a> deadlines and recipe flops and the near impossibility of getting anything done with a toddler underfoot in a kitchen that doesn&#8217;t actually fit the two of us. It wasn&#8217;t pretty. We ordered pizza and watched How I Met Your Mother.</p>
<p>Now, just in case that story elicited even a wisp of pity, you should take it back right now because the week, it got better from there. First, I realized that my &#8220;hey, let&#8217;s not do gifts this year&#8221; conversation with my husband may have never left my own head when he busted out tulips and a spa certificate. (Oops. I&#8217;m a real catch, aren&#8217;t I?) Then my very kind agent and editor talked me off the book ledge, they&#8217;re good at things like that though I suppose they have to be, taking on nuts like me. The following night, I made an actual dinner that involved those <a href="http://smittenkitchen.com/2011/02/green-bean-salad-with-pickled-red-onions-and-fried-almonds/">insane green beans</a> and this little spaghetti dish I&#8217;ll get to in a bit because you know, it&#8217;s hardly as interesting as what we did the day after that:</p>

We are dragging this summer out. Maybe it&#8217;s because as far as I am concerned, it didn&#8217;t really start until August, when the bulk of the heat wave was behind us and we willingly ventured outside of our air-conditioned caves again, and when we finally took a <a href="http://smittenkitchen.com/2010/08/zucchini-and-almond-pasta-salad/">little family vacation</a>. Maybe it&#8217;s because if it is still summer, <a href="http://www.flickr.com/photos/smitten/4990335946/in/photostream/">the baby</a> is still a <i>baby</i> and not a <i>one year-old toddler</i> as he will be after this weekend. But it is most likely because we headed down the Garden State Parkway to Exit 0 last weekend for a belated 5 year anniversary mini-vacation <i>without</i> said baby and somehow, well into September, still got sun, sand and <a href="http://www.flickr.com/photos/smitten/4984609149/">freckles</a>. Summer in September? I&#8217;ll take it.</p>

<p>Despite the fact that the calendar may suggest fall clothes and butternut squash, the markets are still flooded with tomatoes. But, honestly, it wasn&#8217;t a sense of practicality that led me to this recipe. I mean sure, I had almonds, I also had precisely six plum tomatoes that needed to get eaten and I even had the slim margin of time needed to throw this together before starting the surprisingly exhausting dinner-bath-bed cycle for the boo. But that&#8217;s still not why I made it.</p>

Makes enough to dip three pounds of big shrimp
1 cup ketchup
1 tablespoon prepared horseradish
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 teaspoon ancho or other mild chili powder
Pinch cayenne pepper
1 tablespoon juice from 1 small lemon (we use more)

My friend Alexis smartly concluded this weekend that our new goals in life should be to cultivate as many friends as possible with a) vacation homes, b) access to family vacation homes and c) a strong interest in making elaborate home-cooked meals in their free time. And you know, I think she&#8217;s onto something. We spent the holiday weekend <a href="http://smittenkitchen.com/2008/09/raspberry-breakfast-bars/">back in</a> Highlands, North Carolina, guests of my friend Molly&#8217;s parents who were themselves out of town, allowing even more of my friends to pile in. (Remember when having parents out of town meant &#8220;kegger!&#8221;? Ah, you know you&#8217;re in your thirties when it means &#8220;mocktails&#8221; and &#8220;let&#8217;s make our own remoulade!&#8221;.) It was fantastic.</p>

<p>The weather didn&#8217;t much cooperate, so we didn&#8217;t get any hiking in which was a bummer, as I suspect I&#8217;m wearing every one of those meals around my midsection right now, trying to pass it off as &#8220;it&#8217;s the baby, swear&#8221; because, frankly, it&#8217;s never too soon to blame it for everything, right? But the ick weather just left us more time in one of those kitchens with <i>more than one counter</i> and enough cabinets that when you can&#8217;t find something, it takes a good few minutes to find where it is hiding. I tried not to get used to it.</p>

<p>Well <a href="http://thepioneerwoman.com/cooking/2009/04/wish-you-were-here/">that</a> <a href="http://thepioneerwoman.com/cooking/2009/04/im-smitten/">was</a> <a href="http://thepioneerwoman.com/cooking/2009/04/you-must-make-these/">fun</a>! Alex and I arrived at the ranch Friday afternoon after a shockingly non-grueling travel experience (save the 10-minute pat down I received at La Guardia because of this newfangled thing called <i>underwire</i>. Really!) and at least an hour and a half in the car of me going &#8220;ooh horsies!&#8221; &#8220;and cows!&#8221; &#8220;neeeigh! mooo!&#8221; &#8220;ooh dirt roads!&#8221; and Alex mumbling something like &#8220;my god this is going to be a long drive.&#8221;</p>
<p>We let ourselves into <a href="http://thepioneerwoman.com/homeandgarden/category/lodge/">The Lodge</a> and <i>hot damn</i>, people &#8212; I don&#8217;t want to say that the photos don&#8217;t do it justice as the photos are just the loveliest, but it does not compare to walking into a kitchen the size of Manhattan (seriously, you could fit our bedroom in just <a href="http://thepioneerwoman.com/homeandgarden/2009/02/the-pantry-has-landed/">the pantry</a>). We spent a good part of last week marveling over how much bigger our new apartment feels (having a whole 30 percent more space than our old one, I think) and I&#8217;m pretty sure The Lodge is mocking us.</p>

<p>We immediately made ourselves at home, trying on the cowboy gear and testing out each and every one of the sofa&#8217;s sit-abilities (verdict: all plush and delicious). We then fastened our belongings to the end of a stick, hitched up our hiking boots and started on our way to <a href="http://thepioneerwoman.com/homeandgarden/2009/02/lodge-update-the-bedding/">our room at the end of the house</a>, arriving just as the sun went down. Okay, I exaggerate slightly but I sure do like Oklahoma&#8217;s idea of &#8220;personal space&#8221; (and also &#8220;unpacked boxes&#8221; but let&#8217;s not go there, all right?).</p>

And there was the most fun group of people I have yet to vacation with, and you might just know them too.</p>

And so, we went to Paris for eight days, which is never enough. Eight days is long enough to get you entrenched in rhythms (morning caf&#233;, long walk through old streets, afternoon pastry, nap and late dinner), long enough to convince you you cannot remember the place you were before, but also long enough for it to seem cruel when you finally have to leave.</p>

<p>It&#8217;s fun to be an observer, and partial participant, in a foreign country. You get to sit in cafes, unhurried by those needling things like work (though, from the sights of the caf&#233;s, this luxury is not limited to tourists) and watch someone else&#8217;s world from behind your cafe creme. Except, it is all so much more exciting to you. Everything in France tastes louder: the milk, creamier; the coffee, richer; the chicken, so much more &#8220;chickeny&#8221; kind of like when Julia Child had her first meal in France, sole meuni&#232;re (“a morsel of perfection”) and was bowled over by the fact that it tasted so much more like itself. And their butter, oh baby&#8230; well, we&#8217;ll get to that soon.</p>

<p>Right on the heels of getting caught up from <a href="http://smittenkitchen.com/2008/09/raspberry-breakfast-bars/">our last weekend away</a> we skipped town again this past weekend, this time in celebration of (I was going to say that I hope you&#8217;re sitting down for this, but I suspect it is only us who are bowled over by these numbers) our three-year wedding anniversary and our five-year dating anniversary. Whoa.</p>

<p>I had been angling to go out to the North Fork of Long Island ever since <a href="http://eggbeater.typepad.com/shuna/">a friend</a> went on and on about what a wonderful place the <a href="http://www.northforktableandinn.com/">Table and Inn</a> was. Run by four former restaurant-types, including the fantastic pastry chef, Claudia Fleming, her husband, the everything-else chef, and two former front-of-house managers, the place is cozy and delicious.</p>
<p>In a way, these people are living the dream; away from the frenzy of the New York City food scene, they get to cook the food they want and know the people who supply them with it&#8211;mostly from the nearby farms and wineries.</p>

<p>We got to live the dream, too, so to speak, spending the first afternoon at a near-deserted public beach. (So different from <a href="http://en.wikipedia.org/wiki/Brighton_Beach">Brighton</a>, you know, New York City&#8217;s take on a public beach, I had to giggle.) Saturday, or the day that storms threatened to ruin our weekend, we used the gray day to visit six (6!) wineries and my, my, do I love New York wines. In fact, I find them to be the polar opposite of the current Napa style, so light and bright and delicious, it took restraint to limit our purchases to <i>thirteen bottles of wine</i>. That night, we had a dinner so good at the restaurant, it defies words, though I suspect they&#8217;ll slip through in the coming paragraphs and weeks.</p>
