Black Bean Soup with Chipotle and Toasted Cumin Seed Crème Fraîche
Adapted from Bon Appetit
We finished this soup, by the way. Every last serving. We never do that. It’s magic, I tell you.
A big note about cooking times: The original recipe says 6 hours. Mine were done at 2 hours 45 minutes. Do black beans vary [...]

So, I told you about the brisket. Or, the way we talk about it, thhhuuuuh brisssssket, it’s deliciousness making our syllables stretch out melodramatically. We pulled it into tacos with slaw and pickled onions and it was a great end to a great year. But I bet I know what you’ve been wondering since then, “But no appetizer?” Well, let thie question vex your brain no longer: we had soup. (Jacob, however, got into the margaritas. Again.)

My friend Jocelyn made a wonderful black bean soup and she topped it with a toasted cumin seed crema and I just about died, the crema was so good. I mean, the soup was delicious but the crema was one of those toppings that was in lock-step with the soup: the richest, creamist, smokiest accent to a spicy, hearty soup. Since I’ve been slow cooker obsessed since that very day, I vowed to make a version entirely in my new BFF, and to top it with that toasted cumin seed cream. Frankly, the soup is just an excuse to get to it.

Southwestern Pulled Brisket
Adapted from The Food Network, much thanks to Adam Pearson for hipping me to the recipe last year
Serves 4, says the recipe; I’d say you can stretch it a bit further if you go taco-style with fixings
3 pounds beef brisket
Kosher salt
Freshly ground black pepper
2 tablespoons vegetable oil
5 cloves garlic, peeled and smashed

I had the very best New Years Eve meal, and I can’t wait to tell you about it. But first, I must scroll back to tell you my favorite kind of story, one about what an idiot I am. Yes, another one.

Nearly five years ago, we received a slow-cooker as a wedding gift. I looked at it with suspicion, determined it squarely in the realm of 1970s housewives and those that still cooked like them, and stuffed it, still-boxed, in the far reaches of a closet. In the five years that this box has been collecting dust, I started a home cooking site and not a month went by that a person didn’t innocently ask if I have any good slow-cooker recipes and I’d pfft back, “Meh, not my thing.” In the five years that this box has been collecting dust, we have moved twice, each time taking this still-boxed machine with us, and stuffing it in another closet.

And this week, I unpacked it. At 11 p.m. on December 30th, I unwrapped a piece of brisket nearly the size of my baby, browned it in a pan, laid it in the stoneware liner, threw in some onions, a pile of spices, cups of tomatoes and water on top, turned it to low, and at 9 o’clock the next morning woke up and nearly fainted from the deliciousness all around me. Dinner. Was. Made. I had done nothing. And it was the most perfectly cooked piece of brisket I had ever seen. Why did I wait so long? I am consumed with regret.

Cantaloupe Salsa
Adapted from Gourmet
Makes about 2 cups of salsa
This would be great over grilled fish or chicken, not that ours ever got that far. It is equally good with tortilla chips.
It occured to me after the fact that this would be fun with a mix of honeydew and cantaloupe, for color and a bigger range [...]

I wish I could tell you that I’m putting my time into more exciting things* but fact is, it’s nothing but boring stuff keeping me out of the kitchen this week: a new oven that needed installing, pipe work shutting off the water in our apartment today, more doctors appointments than any healthy person should ever require, long classes to teach us the proper diapering of a tiny baby butt, and the kind of steamy heat outside that would make it absurd to turn on the oven anyway (though I should, you know, confirm that it works, right?). Banal, right?

But as usual, this has not kept me from bringing home gobs of produce each week. I can’t help it: everything is just too pretty and tasty. Fortunately, you don’t actually have to cook peak-summer produce to make it taste good. Heck, the hardest thing is not eating it straight even after you’ve set your mind to rendering it into something else.

Sue Torres’ Migas (Mexican-Style Breakfast)
Adapted from Sueños Restaurant, NYC
Migas is Spanish for “crumbs” and the dish is one of those Tex-Mex staples thats a hangover great with oil-crisped tortillas, onions, tomatoes, hot peppers and whatever else you want to serve it with — cheese (goat cheese would be especially awesome), refried beans, warmed tortillas, home [...]

One of the chefs I was most excited to meet at last week’s Bahamas-fest was Sue Torres, the talent behind two of my favorite places to eat in my neighborhood, Rocking Horse (she’s no longer there, but was the one who put their stepped-up Mexican menu on the map) and Sueños (her current, inordinately delicious hidden-away new-Mexican restaurant, replete with a designated tortilla cook). Sure enough, her demo was totally packed and I have her mussel recipe still waiting for me to give it a spin at home, however, when I got home from a week of pork belly and fois gras and four to seven course meals, what I really wanted was something simple.

So I hunted around and hunted around — look, I don’t even want to admit how long I did. I seem to be going through a phase of more extreme than usual pickiness coupled with laziness so basically I was looking for a dinner that took 20 minutes or less to cook and was made of magic — and le voila, Torres’ migas recipe crossed my browser and dinner was, at once, decided.

Crispy Black Bean Tacos with Feta and Cabbage Slaw
Adapted from Bon Appetit, February 2009
There are dozens of ways to tweak this. Next time, in keeping with the shortcut vibe, I might just use Goya’s canned black beans in sauce (which I’ve confessed to loving more than once) instead of mashing a can with what seemed [...]

Let me just get this out of the way before I begin: I’m a little embarrassed by this meal. Not because it took 10 minutes to make, but because it came entirely from things that were already packaged and it tasted… well, not bad, but certainly not like I made any great effort. I bet you can’t wait to sign up, huh?

So why I am telling you about it? Because we’ve all been there, haven’t we? Even in New York City, where you can get anything delivered at any moment’s notice, there are days when one more meal that arrives in plastic-lidded foil containers will send you over the edge. I made this on one of those days. It was 8 p.m., we were both starving and I had one chance to ask Alex to grab something at the store on his way home and I didn’t want to miss it. So I Googled probably one of those most popular searches on the Internet, “10 minute meals” and, well, that pretty much brings us up to today.

Acorn Squash Quesadilla
Adapted from a Dos Caminos demonstration recipe, but similar to many found in their awesome book, ModMex
The secret to getting your quesadillas crisp, Lindquist insisted, is to cook them in either butter or lard, and no skimping. A griddle is best if you have one, but a regular old frying pan will do [...]

A few weeks ago (oh, you didn’t think that meant I was all caught up, did you?) a friend and I went to a cooking demonstration at a great little modern Mexican restaurant named Dos Caminos. I know very close to nothing about Mexican cooking, despite adoring the flavor palate–the sour and tangy citruses against smoky peppers and hearty beans and meats and seriously, I don’t know why it has taken me so long to try to learn a few new things. Chalk it up to intimidation.

The focus of the demonstration was on fall meals, which was particularly awesome because I think we largely associate Mexican cooking with warm weather, a la pico de gaillos and fresh corn everything. I learned a ton. Like, did you know that Mennonites brought cheese to Mexico and that muenster is a great cheese to use in quesadillas? Did you know that tomatillos are the same family as potatoes? Seriously, I was just swimming in information.

I wasn’t even going to mention this dish. I’ve got no expertise in the realm of Tex-Mex cooking and generally think it’s best left to those who know what they’re talking about. Furthermore, despite the fact that I had eggs exactly this way daily when we were at a resort in Mexico last year, I suspect this isn’t the most authentic thing out there.

But it makes no difference because these ad-libbed and hodge-podged huevos rancheros and the smitten kitchen are at something of a standstill. They were dinner last Tuesday. They were dinner on Thursday. They were brunch today. And if this site is indeed a reflection of what goes on in our kitchen, well, then obviously it’s time to share them with you.

Also, because they’re awesome.

This is my favorite-est shortcut–these guys are so perfect right out of the can–with just the right amount of liquid–I see no reason to trouble myself with cooking and seasoning my own. Or at least not when I have a quick meal in mind.

Red Bean Chili
Adapted from Real Simple Magazine

Last week someone said to me, “You know, my tastes are more Julia Child but my lifestyle is more 30 Minute Meals,” and I thought–really quite smugly, I’m embarrassed to say–”I’m so glad I have all this free time.”

This week I am more certain than ever of the crack I was smoking. Seriously, does anyone else have such denial over what their schedules are and are not? Let me tell you what actually happens in the Smitten Kitchen most nights of the week: My husband, being management and all (I tease), leaves work at 5 p.m. but first asks me if we need anything from the store. I IM him some goofy aspirational shopping list in segments (“this is for dinner,” “this for a side dish,” “and these are for the frozen yogurt I am making for dessert,” “and this is so I can get a head-start on the cake I am baking this weekend!”) and then actually end up leaving the office at 6:30 p.m., running two errands, coming home dead exhausted and always a bit winded from four flights of stairs to a neat cluster of grocery bags on the kitchen floor and say meekly “Order sushi?” Because if there is anything I am not going to be starting at 8 p.m. on a Tuesday night, it’s dinner. And a side dish. And frozen yogurt. And cake.

If it’s true that the definition of stupidity is to do something over and over again and expect different results, then I am indeed guilty as charged, because I made something for dinner last night that I know I never, ever like. Somehow I believed it would be better this time, and when it wasn’t, I proceeded to take two bites and then returned to the kitchen to make myself a peanut butter and jelly sandwich.

It seems unfair to blame the margarita chicken, as Alex ate it without complaint, but he’s always been the kind of boy who knows on which side his bread is buttered. Frankly, not only do I not blame the margarita chicken, I was downright jealous of it for getting to marinate for 24 hours in a freshly-squeeze, potent cocktail while I marinated in front of a flat screen monitor, shivering in an over air-conditioned low-walled cube. But in the end, I just can’t give an objective review of the recipe because guess what? I don’t like grilled, boneless skinless chicken cutlets and I never have.
