I suspect most of you think it has been pretty quiet around here because we&#8217;re crazed, sleep-deprived and wholly consumed with nuzzling <a href="http://smittenkitchen.com/2009/09/look-what-we-baked/">squishy baby cheeks</a> and, well, you wouldn&#8217;t be completely off-mark, minus the crazed part. But mostly it has been quiet around here because we&#8217;ve been trying to use any downtime we can spare to take Jacob out as much as possible, as much to maintain our own sanity as his. And let me tell you, this two-week old has been everywhere: <a href="http://www.ess-a-bagel.com/">Ess-a-Bagel</a>, <a href="http://www.flickr.com/photos/smitten/3972867616/">The Doughnut Plant</a>, <a href="http://www.flickr.com/photos/smitten/3972099277/">The Pickle Guys</a> and today he even made it to the <a href="http://www.shakeshacknyc.com/">Shake Shack</a>. He&#8217;s been to two parks, been carted around with <a href="http://www.flickr.com/photos/smitten/3972867868/">countless cups of coffee</a>, caught a <a href="http://www.flickr.com/photos/smitten/3967803422/">first fall leaf</a> and even hit a farmers market, where he attempted to make off with an eggplant before we intervened. Who knew 11-day olds could already have such wayward ways?</p>

<p>I can&#8217;t tell you how happy these little burst of fresh air make us, not only because I&#8217;m really impatient about not being allowed to exercise for four weeks or swim for six (!) but walking is deemed safe, but because this is kind of exactly how I hoped it would be. I spent a lot of time this summer waddling around the different Greenmarkets (&#8220;scaring the locals&#8221; as I&#8217;d call it, as people seemed uneasy to see a 9 million months pregnant woman out sniffing produce, and not home with her feet up and her spoon buried in a pint of Haagen-Dazs) and imagining how much fun it would be to do the same with our baby. &#8220;We can&#8217;t wait to take you <I>everywhere</i>&#8221;  I&#8217;d say to my stomach (no doubt giving the people around me more reason to look uncomfortable) as I stuffed eggplants, tomatoes and zucchini in my shopping bag.</p>

You were so enthusiastic when I recently told you about that <a href="http://smittenkitchen.com/2009/08/cubed-hacked-caprese/">cubed, hacked caprese</a> I throw together a lot in the summer, I am clearly overdue to tell you about one of my other, favorite &#8220;tossed together&#8221; meals. Except that while I really like that caprese salad, this roasted tomato and cippoline dish is something of a religion to me: my obsession with it borders on fervor. I don&#8217;t understand why I can&#8217;t run off with it.</p>

<p>Though the players may seem familiar &#8212; there go those white beans and peak-season tomatoes again! &#8212; after &#8220;roasting the hell out of them&#8221; (the directions I usually give friends when they ask how I made them), they become something else entirely. Sometime so delicious, tears well up in my eyes remembering the last time we got to eat this. Like I said, I get a little carried away.</p>

You wouldn&#8217;t believe how I have stalked this salad. It started when I bookmarked it nearly three years ago. Three! Each and every summer, it has managed to get lost in the shuffle of tomato season. This summer I decided it would be made <i>no matter what</i> only to discover that the link I had to the recipe no longer worked and that &#8212; huh? &#8212; I apparently didn&#8217;t own or couldn&#8217;t find <a href="http://www.amazon.com/gp/product/039305781X?ie=UTF8&#038;tag=smitten-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=039305781X">the cookbook it came from</a>. Amazon fixed that a week later, and I set to making it for a barbecue last weekend, only for the barbecue plans to fall through as heirloom tomatoes grew soft on our counter. One thing after another got in the way of this salad this week &#8212; first we were out of buttermilk, then basil, then daylight, then energy&#8230; &#8212; until I finally dug my heels in last night and decided that we would have corn bread salad with dinner <i>or else</i>. I know, I&#8217;m so intimidating when I threaten salad.</p>

<p>I&#8217;m so sorry I waited so long. This salad is the height of peak-summer awesomeness, a kind of Southern answer to <a href="http://smittenkitchen.com/2008/09/summers-last-hurrah-panzanella/">Italian Panzanella</a> &#8212; with cornbread for the croutons, buttermilk-lime dressing for the olive oil and red wine vinegar and soft lettuces for the chunky vegetables. It was a shame we weren&#8217;t eating it on a wrap-around porch somewhere, with sweet tea in tall glasses and a basket of room-temperature <a href="http://smittenkitchen.com/2008/01/fried-chicken/">fried chicken</a>, but it doesn&#8217;t mean that you can make that happen this holiday weekend.</p>

Let me tell you about something that <i>always</i> happens, and it&#8217;s the best thing, ever: A month or so ago, a reader emailed me and asked me if I&#8217;d ever tried a tomato pie. No, not the Italian-American tomato pie seen in New York and New Jersey &#8212; a thick, bready pizza dough slathered with sauce and broiled with Romano cheese on top then served in squares &#8212; but a Southern thing, baked in a pie shell. Where I&#8217;m from, &#8220;tomato pie&#8221; is the Italian-ish thing I&#8217;ve described it above, thus I responded that I&#8217;ve never heard of it before and added &#8220;but mark my words, not two days after I send off this email, I will have heard about it three times.&#8221;</p>

I&#8217;ve seen a version from Paula Deen, Elise has a version up at <a href="http://simplyrecipes.com/recipes/tomato_pie/">Simply Recipes</a> and my good old August Gourmet magazine &#8212; as <a href="http://smittenkitchen.com/2009/08/melon-agua-fresca/">packed</a> with an impossible level of <a href="http://smittenkitchen.com/2009/08/grilled-eggplant-and-olive-pizza/">late-summer</a> <a href="http://smittenkitchen.com/2009/07/plum-kuchen/">inspiration</a> &#8212; adapts Laurie Colwin&#8217;s (remember her? <a href="http://smittenkitchen.com/2008/09/wheat-bread-without-a-timetable/">We</a> <a href="http://smittenkitchen.com/2008/10/beef-leek-and-barley-soup/">love her</a>.) and James Beard&#8217;s (remember him? <a href="http://smittenkitchen.com/2009/08/lighter-airy-pound-cake/">We love him</a>.) nearly 20 year old version to include market-fresh corn, and updating the crust with a biscuit-like dough.</p>

When it comes to  off-the-cuff and mostly unplanned cooking, I have a tendency to do this thing that, depending on your perspective, is either a total shame or completely understandable: I don&#8217;t tell you about it. I&#8217;ll have thrown together a salad or a sandwich or some odd assortment of vegetables and couscous and made us lunch or dinner and Alex will say, &#8220;will you put this on your site?&#8221; and I&#8217;ll say &#8220;Of course not. Is there some shortage of recipes for sandwiches or roasted vegetables on the internet? Feh, it would be <i>totally boring content</i>.&#8221; [Yes, I actually talk like this. It's embarrassing and I should keep to myself.]</p>

<p>Anyway, I made one of these Deb Dishes the other night and again snorted when Alex suggested I share it with you, until I was about three-quarters of the way done with mine and I realized that just because talking about <i>caprese</i>, or my own hacked version of it, isn&#8217;t exactly the height of cooking originality, doesn&#8217;t mean that someone wouldn&#8217;t enjoy eating exactly what we had in front of us.</p>

<p>So let&#8217;s talk about this cubed-up caprese salad I often make for barbecues or pot-lucks or whenever I want to eat something really summery without doing more than a lick of work: I dice mozzarella and tomatoes together, drain and rinse a can of white beans and toss it with a mixture of pesto (though slivered basil works in a pinch) and red wine vinegar and season it generously with salt and pepper. Sometimes I even add bits of proscuitto, if we have any around, and I&#8217;m feeling wild. Yes, <i>revolutionary</i>, I know.</p>

As it turns out, it has been <a href="http://smittenkitchen.com/2007/09/an-elaborate-ruse/">nearly two years</a> since I attempted to recreate a carrot salad I&#8217;d had at <a href="http://www.thespottedpig.com/">The Spotted Pig</a>, completely lost interest in it halfway through the cooking process, burned dinner and went out for a fairly forgettable dish at a nearby restaurant instead. What a shame, right? This salad deserves better than to be passive-aggressively swapped out for noodles and left to collect dust for years.</p>

<p>So let&#8217;s try this again, because it couldn&#8217;t be simpler. You roast carrots with olive oil, salt, pepper and a smidgen of cumin. When they&#8217;re done, you top them with slices of fresh avocado, some squeezes of lemon juice and fresh seasoning. And that&#8217;s it. But this is so much more fun that your standard roasted carrots, ubiquitous alongside every winter roast. I mean, it&#8217;s 85 degrees out, I don&#8217;t need a side of mashed potatoes. No, these are summer roasted carrots, straight from the market, contrasted with fresh ingredients.</p>

I&#8217;ve been curious to make a yeasted coffee cake for years, but every time I got close to making one, I decided against it. Would it be dry or overly-firm? Would it taste too much like bread? How would I know a good one if I&#8217;ve probably never had an authentic German <i>kuchen</i> &#8212; a general name for a type of sweet, yeasted cake, usually served with coffee &#8212; one? I&#8217;ve said this before but it bears repeating: I&#8217;m a master at talking myself out of things.</p>

<p>But then I saw a plum kuchen in this month&#8217;s Gourmet magazine and I couldn&#8217;t get it out of my head. It called for whole milk yogurt, we had whole milk yogurt in the fridge. It called for plums, we&#8217;ve been buying them in multi-pound increments. It called for one and a quarter sticks of butter and like magic, I had exactly one a quarter sticks of butter left, and seriously, not a smidge more. I had run out of excuses.</p>

I wish I could tell you that I&#8217;m putting my time into more exciting things* but fact is, it&#8217;s nothing but boring stuff keeping me out of the kitchen this week: a new oven that needed installing, pipe work shutting off the water in our apartment today, more doctors appointments than any healthy person should ever require, long classes to teach us the proper diapering of a tiny baby butt, and the kind of steamy heat outside that would make it absurd to turn on the oven anyway (though I should, you know, confirm that it works, right?). Banal, right?</p>

<p>But as usual, this has not kept me from bringing home gobs of produce each week. I can&#8217;t help it: everything is just too pretty and tasty. Fortunately, you don&#8217;t actually have to cook peak-summer produce to make it taste good. Heck, the hardest thing is not eating it straight even after you&#8217;ve set your mind to rendering it into something else.</p>

Continuing my summer fascination with any and all <a href="http://smittenkitchen.com/2009/06/strawberries-and-dumplings/">fruit desserts</a> with <a href="http://smittenkitchen.com/2009/07/blueberry-boy-bait/">goofy names</a>, not two minutes after I discovered the existence of slab pie, I was fixing to make it. Why? Because it looks like a giant <a href="http://www2.kelloggs.com/brand/brand.aspx?brand=202&#038;cat=poptarts">Pop Tart</a>, and surely you don&#8217;t think a woman in her third trimester needs a single other reason to bake something.</p>

<p>But even though I just discovered this whole &#8220;slab pie&#8221; thing, I&#8217;m quite taken with it already &#8212; and not just the ungraceful name. It is, frankly, brilliant, more rustic than a pretty little crimped-edge 9-inch round and flakier too: the large swaths of dough manage show off their layers better than they do in smaller quantities, landing shatters and flecks like confetti all over your plate. Slab pie squares, especially the edges and corners, are more portable than wedges from a traditional round &#8212; how convenient for picnics and pot lucks &#8212; and if you&#8217;ve ever wanted to make a pie but known you had more than eight people to serve, this is your answer: pie for dozens. That is, if the baker is the generous sort.</p>

Inadvertently, <a href="http://www.marthastewart.com">Martha</a> has become my girl this week as I&#8217;ve been floundering around trying to figure out what to do with my seasonal produce that a) I haven&#8217;t done before and b) doesn&#8217;t require any great amount of fussing. Or work. Or adherence to recipes. (Okay, that last part may be more of a <i>Deb</i> than a Martha thing, but you won&#8217;t tell her, right?)  The <a href="http://smittenkitchen.com/2009/07/arugula-potato-and-green-bean-salad/">arugula, potato and green bean salad</a> was good and well enough for a Wednesday night, but did little to help me turn last week&#8217;s languishing South Jersey peaches into something better. (Who forgets they have almost two pounds of farm fresh peaches in their fridge? Guilty as charged.)</p>
