Black Bean Soup with Chipotle and Toasted Cumin Seed Crème Fraîche
Adapted from Bon Appetit
We finished this soup, by the way. Every last serving. We never do that. It’s magic, I tell you.
A big note about cooking times: The original recipe says 6 hours. Mine were done at 2 hours 45 minutes. Do black beans vary [...]

So, I told you about the brisket. Or, the way we talk about it, thhhuuuuh brisssssket, it’s deliciousness making our syllables stretch out melodramatically. We pulled it into tacos with slaw and pickled onions and it was a great end to a great year. But I bet I know what you’ve been wondering since then, “But no appetizer?” Well, let thie question vex your brain no longer: we had soup. (Jacob, however, got into the margaritas. Again.)

My friend Jocelyn made a wonderful black bean soup and she topped it with a toasted cumin seed crema and I just about died, the crema was so good. I mean, the soup was delicious but the crema was one of those toppings that was in lock-step with the soup: the richest, creamist, smokiest accent to a spicy, hearty soup. Since I’ve been slow cooker obsessed since that very day, I vowed to make a version entirely in my new BFF, and to top it with that toasted cumin seed cream. Frankly, the soup is just an excuse to get to it.

Shuna introduced me to this soup. I think it was July 2007 and she’d gathered a bunch of food bloggers at Veselka, a Ukranian diner in the East Village famous for serving awesome beer-blotting food like borsht, stuffed cabbage and pierogis around the clock. It was hot and humid out, however, so the thought of anything besides a grilled kielbasa, pickles and a cold beer seemed insane, and yet there was our host, ordering cabbage soup.

I thought this Eggbeater was insane. Who eats soup in the summer? But Shuna insisted I try at least a spoonful, and that sip did me in. I spent the rest of July craving move and finally caved in August, sitting in that cafe eating steaming hot soup on a steaming hot day because it was the best thing, ever.

Seeing as my parents were spending the afternoon at my apartment on Sunday so I could pilfer content for my site from their recipe box, I figured the least I could do was make them some lunch. And although it is not quite soup weather yet, I have not been able to get my mind off of a recipe I read recently, so soup it was.

Oh, but this is not just any soup. This will be, hands down and no contest, the easiest soup you have ever made. You’re not going to believe how simple it is, and what you get as a result–something so unbelievably hearty, you’ll never have room for your next course. It’s filling and healthy and warming and delicious and oh my god, I bet you just want me to cut to the chase already, don’t you?

Semolina Dumpling Soup
I relied on Julia Child’s basic meat stock recipe using beef marrow bones and a couple vegetables and herbs, and an afternoon at home with a bottle of decongestants to get it done, and ended up reducing it by one-fourth at the end, just to get a pronounced flavor. It was worth every [...]

My German grandmother never made mazto ball soup with chicken stock, or so my mother tells me. In fact, she never made chicken stock at all. Compared to beef stock, chicken stock’s flavor paled, she felt, so why use it?

After our central European vacation, I can see that she’s not alone. We didn’t find one restaurant in Prague or Vienna that didn’t have some version of a beef consomme soup on the menu–all extremely dark and abundantly flavorful. I found this a great relief, as soup was a wonderful way to offset the heaviness of available cuisine, and also absurdly delicious, as I never knew that simple brothy soups could be so tasty.

And you’ll have to bear with me, as I know it is probably not soup season where you are, but between New York’s rainy 55 degrees yesterday and the bad cold Alex and I have passed back and forth in the last eight days, it sure was needed here.

Escarole and Orzo Soup with Turkey Parmesan Meatballs
Adapted from Bon Appetit, February 2003
If desired, grate a little extra Parmesan cheese for passing; a sprinkling over the soup will echo the flavor in the meatballs.

You know those stories about when you were a kid that your parents can’t get enough of? That they’d go on. And on. And on about to their friends, your friends, prom date and future in-laws? Because apparently, when you were little you were cute. I mean, really cute. And you did cute things. And those cute things were hilarious. And still are, nearly 30 years later.

Well, apparently long before I had achieved actual literacy, I went for the next closest thing: memorizing books. But I used to call it–start cooing now, please–”rememorizing” because doesn’t that make more sense, as you must “remember” it? Honestly, it still does. So, as the story goes, I came into my parents bedroom one morning and told them I had learned to read and I would demonstrate with my Favorite Book In the Whole World, Snow, a Dr. Seuss book. “Snow, snow, come out in the snow. Snow, snow, just look at the snow….” It didn’t take them long to figure out I was neither looking at the book, or likely, holding it right side up but, oh, were they charmed.

The single most helpful thing you can keep on-hand if you wish to make your own soups and stocks is a stock bag, a concept I picked up from Sara Moulton way back when. This is a bag you keep in your freezer with ingredients you’re saving to flavor a soup base. It’s especially [...]

A confession: In spite of my current, ongoing, seeming-like-it-will-never-ever-end condition, I don’t like traditional chicken soup. Obviously, boasting such sacrilege, I am undeserving of your sympathy. Obviously, this is why, four days in, I am still on the sofa on my second box of tissues, chugging down my 20th Brita pitcher of water, my nose as red as a rail-thin starlet at 4 a.m., the bitterness of having a SuperBowl party of one only slightly mitigated by the fact that the Giants triumph–I do not embrace everyones’ grandmother’s sworn-by home remedy.

Honestly, it’s not all chicken soup that I do not like; it’s just the stuff I can normally get. Those short noodles? I can never get them on my spoon! Those bits of chicken? Always overcooked. Those carrot specks? They’re just mush. I’ve tried X Deli’s and Y Market’s and Z Restaurant’s and they always disappoint, namely because these three ingredients were never meant to be cooked for the same amount of time, nor kept warm for hours on end, which is why I was given no choice this weekend but to take the matter into my own hand and make my favorite variety of chicken soup: matzo ball soup.

Goulash
Adapted from Gourmet, December 1994
Goulash can be made into either a soup or stew, and the latter can be spooned over egg noodles, potatoes or even gnocchi–how awesome does that sound? Also: This tastes so much better the next day, it is almost a shame to eat it the day you make it. Trust me. [...]

If you’re like most people at the tail end of this frigid first week of January, you’re likely torn between wanting to “do good” for yourself by cooking healthy foods with your eye on the long-off prize of bathing suit season (no matter how improbable it seems as your fingertips numb after spending only half a block exposed) and wanting to “hibernate” with indulgent food that sticks to your ribs, promising to keep you warm and padded until spring comes, and sadly thereafter.

Fortunately, not every meal picks sides. And since I know you didn’t believe that we only ate a cucumber salad for dinner a few nights ago, it is clearly time to tell you about that evening’s other Austro-Hungarian dispatch: goulash.

I know this sounds like the tiniest of triumphs in a world of people who have respectable accomplishments to be proud of, but nonetheless, it brings me great pleasure to announce that I have found a pumpkin soup that meets my approval.

Yes, I know, who talks about pumpkin soup in November? It seems like strictly an October affair. Pumpkins crowd the markets, and the people gather round with an evil glint in their eyes, eager to carve them up and roast their innards, mwa-ha-ha. You can barely turn your head without finding another half dozen pumpkin recipes, and oh, I know, I’ve spread my share around.

Alex and I bought three smallish pumpkins to carve this year, but the weeks leading up to Halloween were chaotic and we never got to them. Feeling guilty that they were about to go to waste, I roasted and pureed one and a half of them (and stupidly deleted the pictures before, uh, downloading them from the camera), before deciding it was an absolutely excessive amount of work and entirely not worth it. I hear everyone goes through this same process once in their lives.

Sweet Potato and Sausage Soup
Bon Appetit, October 2007
We ended up using spicy chorizo (yee-ouch!) but it played off the sweet potatoes perfectly, saving me from death by cayenne.
Gourmet note: This hearty soup gets rich flavor from linguica, a delicious pork sausage from Portugal seasoned with garlic, paprika, and other spices.
Makes 8 servings

Because I am, in all likelihood, about seven years old on the inside but old enough on the outside to know that this might never change, I’m just going to admit from the start that the concept of sausage soup makes me giggle. It also sounds kind of gross, don’t you think? Sausage soup.Hee hee. In fact, when it appeared a few weeks ago as Epicurious’ Recipe of the Day, I sent the link to my husband who, also being seven or maybe seven and a half on the inside, would totally get a kick out of it. But then–and I hope that this doesn’t mean that he is growing up on me, because that just will not do–he actually said that it sounded good, and that we should make it for dinner.

Well his taste buds–which cry for only tomatoes, salt, cured meats and chocolate–haven’t led us astray in the past, have they? Now that the weather has finally plodded into something resembling fall, soup season is officially on and what way to ease ourselves into it but with something hovering in the delicious middle-ground between broth and stew.

I’ve been waiting for this day for a long time. You see, I’ve told you about a lot of soups–I mean, a lot of soups–but I haven’t gotten to share with you this awesome red pepper soup I plucked from the New York Times nearly two years ago because I started this site just a little bit past pepper season.

So, for ten months, I have tap-tap-tapped my feet until peak peck-o-pepper-picking time came round again and I could tell you about what a find this soup really was. And yesterday, yesterday when I hadn’t planned to make dinner because I was tired and completely uninspired, on the way home it hit me that there is no more legitimate time of year to buy pepper than the present, and suddenly I was enticed into cooking again. So, I swung into Garden of Eden–which by the way, charges the same atrocious prices for bell peppers whether they’re in season or not–got the two ingredients I didn’t already have and burst into the apartment with a “Ta-da!” and a “Guess what!” and a “I finally get to make the red pepper soup tonight!”
