<p>So, this is a tale of two salads. No wait, three. Okay, this is the tale of <i>three</i> salads. The first one crossed our table at brunch with my mother and <a href="http://www.flickr.com/photos/smitten/4407851926/">the little pilot</a> two weeks ago  (you might remember that our last brunch together resulting in us obsessing over <a href="http://smittenkitchen.com/2010/02/monkey-bread-with-cream-cheese-glaze/">monkey bread</a>; who knew brunch could be such a source of inspiration?) at <a href="http://www.backfortynyc.com/">one of my favorite local restaurants</a>: warm mushroom, softly cooked, chestnuts cooked in brown butter, bacon lardons and a port reduction. We haven&#8217;t stopped talking about it since.</p>

<p>So, when I was looking for a salad to make for our <a href="http://smittenkitchen.com/2010/03/st-louis-gooey-butter-cake/">accidental dinner party</a> last weekend that did not hinge entirely on out-of-season always-going-bad-too-fast never-tasting-as-good-as-they-should salad greens and spied on a warm mushroom salad in the always-amazing <a href="http://www.amazon.com/gp/product/1400042151?ie=UTF8&#038;tag=smitten-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=1400042151">Sunday Suppers at Lucques</a>, I had a good feeling about it.</p>

Like many New Yorkers, I have a healthy fear of the Upper West Side&#8217;s <a href="http://www.fairwaymarket.com/">Fairway Market</a> (the Harlem one isn&#8217;t so bad, but the Pulaski Skyway is technically closer to my apartment). Sure, they sell everything in the world, but from my rough estimation, the store contains <I>everyone in the world</i> at any given moment and it turns out, the quickest way to turn me into the kind of person with plumes of smoke pouring from my ears as I white-knuckle a shopping cart is to ram into the back of my ankles with yours. Ahem. So yes, I don&#8217;t shop there very often.</p>

<p>But last weekend! <i>Last weekend</i> I went to their new store in New Jersey&#8230; ah, New Jersey with its wide-open spaces and aisles wide enough for two shopping carts <i>in opposing directions</i> and acres upon acres of refrigerated produce space. I about lost it when I saw more than a dozen varieties of citrus and suddenly this citrus salad idea that I had been kicking around in the back of my head became The Next Thing I Absolutely Had To Make.</p>

You wouldn&#8217;t believe how I have stalked this salad. It started when I bookmarked it nearly three years ago. Three! Each and every summer, it has managed to get lost in the shuffle of tomato season. This summer I decided it would be made <i>no matter what</i> only to discover that the link I had to the recipe no longer worked and that &#8212; huh? &#8212; I apparently didn&#8217;t own or couldn&#8217;t find <a href="http://www.amazon.com/gp/product/039305781X?ie=UTF8&#038;tag=smitten-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=039305781X">the cookbook it came from</a>. Amazon fixed that a week later, and I set to making it for a barbecue last weekend, only for the barbecue plans to fall through as heirloom tomatoes grew soft on our counter. One thing after another got in the way of this salad this week &#8212; first we were out of buttermilk, then basil, then daylight, then energy&#8230; &#8212; until I finally dug my heels in last night and decided that we would have corn bread salad with dinner <i>or else</i>. I know, I&#8217;m so intimidating when I threaten salad.</p>

<p>I&#8217;m so sorry I waited so long. This salad is the height of peak-summer awesomeness, a kind of Southern answer to <a href="http://smittenkitchen.com/2008/09/summers-last-hurrah-panzanella/">Italian Panzanella</a> &#8212; with cornbread for the croutons, buttermilk-lime dressing for the olive oil and red wine vinegar and soft lettuces for the chunky vegetables. It was a shame we weren&#8217;t eating it on a wrap-around porch somewhere, with sweet tea in tall glasses and a basket of room-temperature <a href="http://smittenkitchen.com/2008/01/fried-chicken/">fried chicken</a>, but it doesn&#8217;t mean that you can make that happen this holiday weekend.</p>

When it comes to  off-the-cuff and mostly unplanned cooking, I have a tendency to do this thing that, depending on your perspective, is either a total shame or completely understandable: I don&#8217;t tell you about it. I&#8217;ll have thrown together a salad or a sandwich or some odd assortment of vegetables and couscous and made us lunch or dinner and Alex will say, &#8220;will you put this on your site?&#8221; and I&#8217;ll say &#8220;Of course not. Is there some shortage of recipes for sandwiches or roasted vegetables on the internet? Feh, it would be <i>totally boring content</i>.&#8221; [Yes, I actually talk like this. It's embarrassing and I should keep to myself.]</p>

<p>Anyway, I made one of these Deb Dishes the other night and again snorted when Alex suggested I share it with you, until I was about three-quarters of the way done with mine and I realized that just because talking about <i>caprese</i>, or my own hacked version of it, isn&#8217;t exactly the height of cooking originality, doesn&#8217;t mean that someone wouldn&#8217;t enjoy eating exactly what we had in front of us.</p>

<p>So let&#8217;s talk about this cubed-up caprese salad I often make for barbecues or pot-lucks or whenever I want to eat something really summery without doing more than a lick of work: I dice mozzarella and tomatoes together, drain and rinse a can of white beans and toss it with a mixture of pesto (though slivered basil works in a pinch) and red wine vinegar and season it generously with salt and pepper. Sometimes I even add bits of proscuitto, if we have any around, and I&#8217;m feeling wild. Yes, <i>revolutionary</i>, I know.</p>

Alex and I have kind of a <i>thing</i> for Maine, after going to Portland a few years ago and becoming instantly <a href="http://www.flickr.com/photos/smitten/219692033/in/set-72157594243754041/">smitten</a>: the <a href="http://www.flickr.com/photos/smitten/219692571/in/set-72157594243754041/">weathered barns</a>, the <a href="http://www.flickr.com/photos/smitten/219692864/in/set-72157594243754041/">hand-painted signs</a>, <a href="http://www.flickr.com/photos/smitten/219693259/in/set-72157594243754041/">wild blueberries</a> and, well, you know the <a href="http://www.flickr.com/photos/smitten/219692715/in/set-72157594243754041/">lobster aplenty</a>.</p>

<p>And so, with our anniversary approaching and the looming deadline of babybabybaby, we decided to head back to Kennebunkport for a long weekend later this month. Except, somewhere along the way I got really, really pregnant (funny how those things happen!), I mean like super-pregs, I mean staggering bursts of productivity (the doorways have been <i>detailed</i>) followed by four-hour recovery periods (this whole upright thing is <i>exhausting</i>) and suddenly the thought of a six-hour drive each way a mere three weeks before a due date I&#8217;m not buying seemed&#8230; ill-planned. Thus, we&#8217;ve decided to postpone our trip until a hopefully less waddlesome time.</p>

I&#8217;ve spent way too much time this summer trying to dream up a pasta salad that wasn&#8217;t boring, or predictable, or well, you know, the kind of familiar pasta salad territory you don&#8217;t need me to go over for you. Because I love a good pasta salad, I just don&#8217;t find them often. Usually, they&#8217;re missing the freshness you&#8217;d expect from something you eat in the summer, when the markets are bursting at the seams with peak-season produce. Often the dressing is a throw-away, either a too-plain vinaigrette or heaps of mayonnaise, lending itself to more of a <i>mass</i> than a salad. So I knew what I didn&#8217;t want, I just hadn&#8217;t figured out what I did.</p>

<p>Not for the first time, the inspiration came from a little French restaurant in our neighborhood, which along with the usual deliciousness &#8212; roasted chicken, steak frites, mussels, yes please &#8212; always tucks some sort of straight-from-the-market freshness on the specials. It said &#8220;Five Bean Salad&#8221; but what arrived was a plate, no, <i>platter</i> of al dente shell peas and snow peas and skinny green beans and fat yellow beans and sugar snaps and cranberry beans and favas, tossed in a roasted red pepper sauce with little bits of chevre tucked within. It was like a plate of summer, and even though I am so not the finish-your-plate-even-if-you&#8217;re-full-type the thought of letting even one fresh pea go to waste felt even more wrong and so I ate <i>the whole thing</i> and look at that folks! I guess preggo finally has her appetite back. Or was emphatically craving green vegetables.</p>

As it turns out, it has been <a href="http://smittenkitchen.com/2007/09/an-elaborate-ruse/">nearly two years</a> since I attempted to recreate a carrot salad I&#8217;d had at <a href="http://www.thespottedpig.com/">The Spotted Pig</a>, completely lost interest in it halfway through the cooking process, burned dinner and went out for a fairly forgettable dish at a nearby restaurant instead. What a shame, right? This salad deserves better than to be passive-aggressively swapped out for noodles and left to collect dust for years.</p>

<p>So let&#8217;s try this again, because it couldn&#8217;t be simpler. You roast carrots with olive oil, salt, pepper and a smidgen of cumin. When they&#8217;re done, you top them with slices of fresh avocado, some squeezes of lemon juice and fresh seasoning. And that&#8217;s it. But this is so much more fun that your standard roasted carrots, ubiquitous alongside every winter roast. I mean, it&#8217;s 85 degrees out, I don&#8217;t need a side of mashed potatoes. No, these are summer roasted carrots, straight from the market, contrasted with fresh ingredients.</p>

I wasn&#8217;t kidding last week when I said that I have staged an intervention with myself and am trying my hardest to cook more things at home that can be even loosely construed as dinner. I mean, somehow the farmers markets are bursting with beans and greens and peppers and potatoes and peaches and&#8230; And I ate (average) pad thai for lunch. It doesn&#8217;t even compute.</p>

<p>But I still only want simple food. When food is this fresh, little needs to be done to make it stand out, which is perfect as I&#8217;m exactly lazy enough right now that I barely want to fuss. I saw this recipe from Martha Stewart a few weeks ago when I was trying to dream up a potato salad that wasn&#8217;t so&#8230; weighty. Basically, I wanted my potatoes but I didn&#8217;t need them swaddled in <a href="http://smittenkitchen.com/2007/06/spuds-most-worthy/">mayo</a> or <a href="http://smittenkitchen.com/2009/06/horseradish-potato-salad/">sour cream</a> or <a href="http://smittenkitchen.com/2007/07/eyes-wide-open-all-the-time/">chopped eggs and pickles</a>&#8230; at least not <i>every</i> day.</p>

I have to own up to something: I&#8217;ve lost interest in leafy salads. There was a time when we filled out every dinner meal with mixed greens with a light vinaigrette and any plate without them looked sparse. But somewhere along the line, the world of lettuce has been so co-opted by bagged and pre-washed, chlorine-tinged flavorless green leaf-looking structures (what, do I sound like I have a bone to pick with them or something?) that not even fancy restaurants are a reliable source of good leafy salads anymore, and so, for the most part, I&#8217;ve bowed out, making only occasional exceptions made for nice greens mix or crunchy, velvety Bibb lettuce at a farmers market.</p>

<p>Leafy salads are overrated, anyway, especially in the face of the big crunch and longer fridge shelf life of mixtures like this. And well, I know that chasing <a href="http://smittenkitchen.com/2009/06/chocolate-yogurt-snack-cakes/">chocolate snack cakes</a> with such <i>egregious healthfulness</i> will likely encourage nothing but yawns, the truth is, little has changed since I coined myself months ago The Most Boring Pregnant Eater, ever, with my steady diet of <a href="http://smittenkitchen.com/2009/04/pickled-grapes-with-cinnamon-and-black-pepper/">grapes</a>, <a href="http://smittenkitchen.com/2009/05/broccoli-slaw/">raw broccoli</a> and now sweet red peppers. It&#8217;s Father&#8217;s Day around these here parts which is supposed to mean one thing, really (you know, aside from hanging out with the dads, and papas-to-be in your life): <a href="http://smittenkitchen.com/recipes/#Grilling">backyard grilling</a>. Alas, New York City has moved to Seattle this June, and we&#8217;ve spent more time umbrella bumping on sidewalks and avoiding street juice puddles than actually being beckoned to suburban backyards for some sun and chaise lounge napping but don&#8217;t worry, I still made you some potato salad. You know, in case the weather decides to get out of its funk for an hour or two.</p>

<p>I&#8217;ve been mumbling about making a horseradish potato salad for a few weeks now, threatening I guess is more like it, because I know horseradish is another of those Great Divider ingredients. Many find it spicy, and well, many varieties are, but the vast majority of the jars that I grab in the grocery store aisle are about as ferocious as a kitten. What I was really after was that cool but heady sinus-clearing aroma, which I imagined that paired with creamy dressing and some fresh dill and chives would be a most welcome accent to whatever we throw on the grill. (Oh please please let it be <a href="http://smittenkitchen.com/2008/05/mollys-dry-rubbed-ribs/">Molly&#8217;s ribs</a>!) And while we&#8217;ve only had the smallest of samples (see how giving I am?), this Russian I live with gives it his hearty seal of approval, and looks forward to next Father&#8217;s Day, when he won&#8217;t be stuck washing up the dishes when he&#8217;s done.</p>
