2 mangoes, peeled, pitted and julienned
1 to 1 1/4 pounds Napa cabbage, halved and sliced very thinly
1 red pepper, julienned
1/2 red onion, thinly sliced
6 tablespoons of fresh lime juice, from about two limes
1/4 cup rice vinegar
2 tablespoons oil of your choice
1/2 teaspoon salt

The inspiration for this slaw is a mango salad I order way too often from a local Thai place in hopes to offset the inevitable damage from the pad Thai I order with it. It has strips of mango, slivers of red pepper, red onion and mint, large toasted cashews and a spicy dressing with a lot of lime in it. It&#8217;s always a surprise; sometimes the mango is underripe and sour (which I understand to be more traditional) and sometimes it&#8217;s sweet and almost overripe. The best part is that the salad tastes good no matter how the mango arrived that day.</p>

<p>Of course, being me, I had to slaw it. Because that&#8217;s what I do, you know? <a href="http://smittenkitchen.com/2009/05/broccoli-slaw/">Broccoli!</a> <a href="http://smittenkitchen.com/2007/04/chicken-jealousy/">Green onion!</a> <a href="http://smittenkitchen.com/2006/11/not-your-mamas-coleslaw/">Better than old-school</a> and <a href="http://smittenkitchen.com/2008/06/dead-simple-slaw-6-heat-wave-reprieves/">dead simple!</a> <a href=http://smittenkitchen.com/2009/05/slaw-tartare/">Tartar sauce slaw</a>, <a href="http://www.npr.org/templates/story/story.php?storyId=12570289">pickled slaw</a> and three more where that came from. I mean, salads are great but crunchy slaws that you pile on a burger or alongside anything grilled are the best heat wave antidote and this is my favorite one in a long time. It manages to be both sweet (my mangoes were very ripe) and sour, packing a little heat in the background and it was an incredibly refreshing change from the creamy dressing hegemony.</p>

Mango Curd
Adapted from Bon Appetit, June 1998
Makes 1 to 1.5 cups
1 15-ounce ripe mango, peeled, pitted, cut into 1/2-inch pieces

<p>So [wipes hands on the filthiest apron you have ever seen] where did we leave off? Oh right! You see, I am making a wedding cake. And despite the fact that I have made <a href="http://smittenkitchen.com/recipes/#Sweets">more birthday and celebration cakes</a> in the last two years that I can count on all of my fingers and most of my toes, wedding cakes are a whole &#8216;nother scene. I thought &#8220;I&#8217;ll just bake three cakes and snap &#8216;em all together.&#8221; Hoo-hoo-hee-hee, how much I have learned!</p>

<p>Since we <a href="http://smittenkitchen.com/2008/06/project-wedding-cake-an-introduction/">last spoke</a>, we&#8217;ve made a lot of progress. I have baked 6&#8243;-square samples of both the vanilla and chocolate cakes we will be using with their requisite fillings, the bride came and tasted (also <a href="http://pixxiestails.com">Joc</a>, when I begged her to remove the thigh-offending goods from our fridge!), brought home samples and everyone involve declared them a raging success. How wonderful, right?</p>

<p>I have also read all <a href="http://smittenkitchen.com/2008/06/project-wedding-cake-an-introduction/">240-and-counting</a> of your comments and Internet, I am just filled with glee that you all came out to help this project along. I&#8217;d bake you all a cake, but I think we&#8217;ve already seen what kind of trouble that gets me into. Instead, I have made several adjustments based on your advice: the largest cake layer is now chocolate (in an effort to balance the number of white and chocolate cake slices) and I know with absolute certainty that I will be assembling the cake on site (I mean, phew, I was hoping you&#8217;d suggest that anyway).</p>
