A whopping eight years ago, I joined a friend and her family for an afternoon at the then newly-opened <a href="http://www.neuegalerie.org/main.html?langkey=english">Neue Galerie</a>, which seriously, you should check out some time when you&#8217;re in my city. (Look at me, playing tourist guide!) The early 20th century German and Austrian art is fantastic but even more wonderful is the Cafe Sabarsky within which models itself after a turn-of-the-century Viennese cafe. But really, I don&#8217;t want to talk about the Kadinskys or the Kavalierspitz today, I want to talk about this cake. That I had there that day. That I have not shut up about since.</p>

<p>I wasn&#8217;t even the one who ordered it. Eight years ago, things called &#8220;lemon poppy seed cake&#8221; were ubiquitous, and largely nothing to write home about. I never understood what the poppy seeds were doing there, all sparse like occasional punctuations, adding&#8230; visual interest? It was generally unclear. They were lemon cakes, and not even great ones, with speckles. But this cake. THIS CAKE. (Sorry, it makes me shouty.) First its appearance: Poppy seeds clustered so densely, the cake was nearly black. I&#8217;d never seen anything like it &#8212; so intriguing, so ominous! And its texture: It managed to be one of the lightest cakes I&#8217;d ever eaten, without the blandness that&#8217;s all-too-common in angel food, chiffon and other &#8220;airy&#8221; confections. And the flavor: It tasted like lemon-scented butter, without the acidity typical in lemon cakes. This was about the <i>perfume</i> of the lemon, not the juice. And the poppy seeds! Did you know that poppy seeds actually do have a flavor &#8212; a slight nuttiness &#8212; should you allow enough of them in that they can actually speak up?</p>

Watermelon Lemonade

Makes enough to fill two glasses with ice cubes; we quadrupled it to fill a pitcher. We already need more.
1/4 cup (2 ounces) fresh-squeezed lemon juice
1/2 cup (4 ounces) fresh watermelon puree, strained through a coarse strainer to remove seeds
3 tablespoons (1 1/2 ounces) simple syrup*

As will happen from time to time (cough<i>daily</i>), last week I got to longing for what I consider one of the greatest Cocktails Out There That Is Not a Manhattan, one that goes by the name Porch Swing as is served at <a href="http://www.bluesmoke.com/blue/index.html">Blue Smoke</a>, a delicious mutt of a barbecue joint (Memphis babybacks, Kansas City spareribs, North Carolina slaw and Texas brisket, anyone?) on East 27th Street. The Porch Swing is a also a delicious mutt, with Pimm&#8217;s and Hendrick&#8217;s Gin and Lemonade and 7-Up and thin slices of cucumber (<a href="http://www.insatiable-critic.com/Article.aspx?ID=1112&#038;keyword=Cool%20as%20a%20Cucumber:%20Blue%20Smoke%27s%20Porch%20Swing%20and%20Bubby%27s%20Watermelon%20Lemonade">recipe over here</a>) and <I>omg is it October when mama can have a proper, strong drink yet</i>?</p>

<p>But for once, something phenomenal came out of this backyard longing, and that was (when Googling about for the official Porch Swing recipe), the discovery of something a little more gestationally-appropriate, the Watermelon Lemonade from <a href="http://bubbys.com/">Bubby&#8217;s</a>, a pie and chicken noodle soup-style comfort food restaurant in TriBeCa. What brought these two drinks together was some Mix-Off event, where the Porch Swing won first prize in the boozy category and the watermelon lemonade stole my heart in the safe-for-babies zones. It had to be mine. Heck, it was mine long before I had a sip.</p>

<a href="http://en.wikipedia.org/wiki/Granita">Granitas</a> have never exactly captured my imagination. Flecks of flavored ice in a bowl seemed rather dull, and their place in the dessert repository was kind of lost on me. Trust me, if I&#8217;m hoping you&#8217;re going to bust out some salted caramel dark chocolate mousse and you come out of the kitchen with pale icy chips? It&#8217;s going to be hard for me to feign enthusiasm.</p>

They&#8217;re the perfect antidote to the sticky, oppressive summer days to come &#8212; frosty, crunchy and tart &#8212; tossing out that annoying plastic crank in favor of the unbranded simplicity of two forks and a roasting pan, and swapping the unnatural syrups in frightening hues for fresh fruit juice.</p>

A couple weeks ago, I had a fantastic warm asparagus salad at a nearby restaurant, one I immediately swore I&#8217;d make at home. It had segments of white and green asparagus tossed with goat cheese and a tarragon and lemony mint vinaigrette and it was piled on a bed of red endive, my favorite. It was stunning. It was delicious. Alas, this is not it. What a tease I am, right?</p>

<p>After trying and failing to find all three elements &#8212; the green asparagus, white asparagus and the red endive &#8212; for the next two weeks, I gave up. Oh, and sure, you could use all green asparagus and regular pale endive, but you&#8217;ve met me, right? I&#8217;m a pain in the butt and without the visual, it was going to be no fun at all for me. It would not do.</p>

Everyone has a favorite lemon tart, don&#8217;t they? I think of them as one those pastries that people obsess over to the point that crafting a great one is practically considered a higher calling. And I&#8217;d joke about this (okay, well, just a little) but if you&#8217;ve ever had a good, nay, great one, you totally get it. An awesome one will blow your mind. Some are filled with only a simple lemon curd, others with a creamier lemon filling, some are studded with fresh raspberries or have bits of candied lemon peel inside and the rare one even has a <a href="http://www.flickr.com/photos/smitten/2958811489/in/set-72157608173292636/">chunk of a fresh lemon segment within</a>. I have never met one I didn&#8217;t like.</p>

The fresh cranberry gets no love. I can&#8217;t tell you how many recipes I have sifted through recently that boasted cranberry in their titles only to find out that they were actually calling for those shriveled and over-sweetened dried ones. Why must fresh cranberries be &#8220;<a href="http://www.nytimes.com/2008/11/12/dining/12cran.html?ref=dining">the neglected stepchild of the season</a>&#8220;? It is totally undeserved.</p>

<p>Fresh cranberries are prettier. They&#8217;re impressively hardy, keeping for weeks in the fridge and even longer in the freezer with no noticeable aging. And even though I think this is what puts people off, they have a tartness that makes everything they touch better. Because when you put something tart against something sweet, you get a fantastic contrast and this complexity, my friends, is a very good thing.</p>

We were almost done with our <a href="http://smittenkitchen.com/2008/04/shaker-lemon-pie/">blissful batch of Meyer lemons</a> when I realized that it would be a crime against&#8230; well, <i>something</i> dramatic if I finished them without sharing with you a recipe which might look at the outset like just a plain old loaf cake, but should not be taken at face value.  You may see lemons and blueberry but I want you to see a palette upon which you can paint your countless citrus yogurt cake dreams. This cake is so moist that it needs to be cut carefully, so not to smoosh the crumbs from the top of the cake into the bottom, and so delicious, I dare you to make it last a week(end).</p>

A little over a year ago, my mother and I leapt at the opportunity to make a whole lemon tart featured in the New York Times and ended up with <a href="http://smittenkitchen.com/2007/02/caustic-confit/">one of the most caustic, inedible things</a> I have yet to make on this site. And people, with an ever-growing category of &#8220;disasters,&#8221; that is <a href="http://smittenkitchen.com/category/disasters/">no small feat</a>.</p>

<p>We received a lot of comments on that post ranging from sympathy to eye-rolling (as one of this woman&#8217;s recipes had previously felled another reader) but the bulk of them came in two veins: You should have used Meyer lemons and you really ought to make a Shaker Lemon Pie next. </p>
<p>As for the Meyer lemons, a milder and thinner-skinned cousin of the lemons we have readily available in the U.S., these comments made me dig my heels in, oh, just a little. Because while Meyer lemons may have yielded a better outcome, this was not my complaint: my complaint had been that the recipe said that Meyer lemons were an option not a requirement and I held the recipe to this and it nearly cauterized a hole in the roof of my mouth. </p>
<p>But there was another reason that I knew that it would take more than Meyer lemons to save this tart, and that, my friends, is a simple matter of proportion. The Evil Tart&#8217;s citrus to sugar ratio was eight whole lemons to three-quarters of a cup. The standard Shaker Lemon Pie recipe uses two whole lemons to two cups of sugar. You don&#8217;t need to be a math whiz to figure out why that all went to hell in a handbasket.</p>

January is always the time of year when most of us get caught up in the winter produce doldrums, fueled by the dearth of flavorful fruit and the overabundance of hard, starchy vegetables. But I find if I set my mind on citrus, I can carefully sidestep most bouts of Farmer&#8217;s Market Mourning. There are few things teeming with more promise of a sunnier tomorrow than sour-sweet piercing members of the <a href="http://en.wikipedia.org/wiki/Rutaceae"><em>rutaceae</em> family</a>, and I&#8217;ve got an archive full of <a href="http://smittenkitchen.com/2007/04/longing-in-cookie-form">margarita cookies</a>, <a href="http://smittenkitchen.com/2006/10/lemony-persnick">lemon bundts</a>, <A href="http://smittenkitchen.com/2006/09/this-cake-has-a-hole-in-it">orange chocolate chunks</a>, <a href="http://smittenkitchen.com/2007/01/cake-paradisi">grapefruit loaves</a> and <a href="http://smittenkitchen.com/2006/09/in-praise-of-the-pocket-sized">key lime tartlets</a> that should assure you that you need not feel that you are missing out just because the peaches and berries have gone into hibernation.</p>

<p>But I haven&#8217;t had a lemon bar in there before now, despite repeated requests and, heck, even pleading for one by various people inside my computer. You&#8217;d think it is because I&#8217;m stubborn but it actually that my bar (ha) for lemon bars has been set very high by my mother, who has an award-winning recipe somewhere in her files. Upon request, she sent it to me a couple years ago, but when they didn&#8217;t come out the way I had remembered, her response was &#8220;oh, I must have sent you the wrong one.&#8221; Tell me, if you had a recipe for lemon bars that you had won you a cooking contest, why would you have a second version in your box that wasn&#8217;t as good? Perhaps if you ask her, you&#8217;ll get further than I did.</p>

<p>Nonetheless, as it appears that despite my caveats this <a href="http://nablopomo.ning.com/profile/smittenkitchen">NaBloPoMo</a> thing is <i>on</i>, I figure that if nothing else I can use it to clean out the refrigerator. Have you ever bought something but forgotten to eat it then found six weeks later that it was in the very back of the refrigerator, still in perfect condition? Did it make you feel wildly uncomfortable about the preservatives that must be in your food? Did you get over it and eat it anyway? Well, I did. I found some little green apples in the produce drawer this morning that Alex, despite loving green apples, had been staunchly avoiding because they had actually ripened (true story: the boy doesn&#8217;t like ripe fruit), and then there was some leftover ricotta from a dish we&#8217;ll get to next week and a lemon that really had better days, but wouldn&#8217;t my grandmothers be proud that I hadn&#8217;t wasted food? </p>
