Of all the things I had anticipated about being a new mama — the sleep deprivation, the fact that sometimes babies cry for no reason, whatsoever, that they look ridiculously cute things that are too big on them — at least one of the things that I hadn’t considered was, well, the Itch. The one you get at the end of your nose nearly the second after you start feeding the baby and have not a finger free to scratch it.

It’s not always an itch, though. Sometimes it’s a just a bit of water that you need — just a sip! from that glass just two feet in front of you! Oh, how you would do anything for that sip of water! But a lot of times these days, it’s a recipe. I can’t help it. I have so little time to cook and yet these recipe ideas are getting louder and louder in my head… winter salads and tangy pies and buttery leeks and funky salsas and I have more dishes than I could cook in two hundred nap times, it seems, nonetheless in the 15 minutes of a single one that is left after I have both scratched my nose and taken that sweet, sweet sip of water.

I keep promising you all some quick, easy recipes but sharing instead a mousse that requires at least five bowls and an electric mixer that must be washed down no less than three times, a quiche that has at least three different components, cauliflower that demands you cook each ingredient separately and a from-scratch doughnut recipe that entails reducing, rolling, freezing, frying and dipping. I have no doubt that you’re standing out there in front of your monitor, hands on hips, demanding answers. Except I don’t have any logic or rationale that will explain I choose to use my limited free minutes of time to make elaborate recipes and not, say, dinner, I only have this one peace offering today.

There’s a caveat, however. This is a ridiculously quick recipe if you have a microwave. We used to but don’t any longer so it still took over an hour, but it’s an hour that requires only a few minutes of hands-on time. Still, it is my favorite preparation of spaghetti squash, not only because it is delicious but because it approaches winter squash in my favorite way: by waking it up. I’ve never had a taste for squash recipes with cream or sugar or piles of cinnamon; I think the natural sweetness of squash is best contrasted with bolder ingredients, like garlic and tahini, jalapenos, olives and preserved lemons, chile-lime vinagrettes, hearty beans and ham or cayenne-dusted caramelized onions. I think you get the picture.

I have never met a variety of deep-fried dough I didn’t like. Yet, given that most doughy fried items out there are rather mediocre* — say, the chain donut shop steps from my apartment — I don’t find myself indulging this habit as often as I’d like. The exception to this rule is apple cider doughnuts, which I am absolutely weak in the face of. Despite the fact that even the loveliest looking ones at the farm stands tend to disappoint, I eat them anyway. Because it’s fall and crunching through ochre-tinted leaves, wrapping your fingers around a paper cup of mulled cider and eating even lackluster apple cider doughnuts is the right and proper thing to do.

Or it was. Although I am sure my timing couldn’t have been worse — you know, with a four week old to take care of, no biggie — I got a hankering something fierce last week for the kind of apple cider doughnut I almost never find around here — save this piping hot and off-the-chart perfect ones Alex and I shared at Hearth this past Valentines Day. When I realized that recipe was readily available on the Web, it was a short and slippery path to posing my infant son to a 3-pound tub of trans fats… er, but we’ll get to that in a bit.

As excited as I am to be — slowly, tentatively — back in the kitchen, I seem to be stuck at the beginning, or at least the beginning of the day. I’m fixated on granola and eggy things, breakfast-y quick breads and this thing I made for the sole purpose of eating with my morning yogurt, and I suspect it has everything to do with us feeling almost constantly like we’ve just woken up. And too early, sigh.

Fortunately, the cause is really cute and so we’ve decided to keep him, even if he at the advanced age of three and a half weeks has decided he no longer wants to sleep in those four-hour stretches he had teased us with in his misspent youth. However, I am stubborn and refuse to complain about the sleeplessness because there is nothing more predictable than new parents complaining about sleeplessness, and I hate being predictable. Instead, I have decided to embrace it, thus if I constantly feel like it is breakfast and I need a cup of coffee, then well, breakfast and a cup of coffee we will have.

I’ve confessed again and again that I’m just not the kind of person who likes to eat things repeatedly. What’s bad for, I don’t know, using up leftovers, however, is good for having the kind of site that updates three times a week with new recipes. So I’d say it all evens out. But every so often, actually — way too rarely, rarely — I hit on something that I cannot stop eating. For weeks, months. And now, we’re over a year and I’m telling you, if I had a butternut squash at home right now, we’d already have dinner made.

I’ve mentioned this salad before but I realize that this is one of those recipes I’m going to refresh as often as I can get away with. The second I had these ingredients together — lemon, tahini, butternut squash, garlic, chickpeas — I couldn’t believe it was the first time. They were made to be together, and in the times that I’ve had them apart in other recipes, I always know what they’re missing.
