White chocolate brownies have it tough. They share a name with a baked good that needs no improving on; their chocolate is rejected by self-titled &#8220;real&#8221; chocolate eaters for being a pale imitation of the rich, nutty and bittersweet awesomeness of darker chocolates; this same chocolate is so sweet that you must dial back the sugar in your brownies to adjust for it, removing moisture, risking leaving them cake-like and if it couldn&#8217;t get much worse, they&#8217;re barely white. More like, pale-yellowish-beige. <i>Yum</i>, right?</p>

<p>I was one of those white chocolate rejectors for a long time but I finally made peace with it when I stopped judging it through the lens of chocolate &#8212; which is bitter and complex in ways that white chocolate cannot be &#8212; and accepted it for what it is, a buttery sweet confection that, when used carefully, plays exceptionally well with others, like <a href="http://smittenkitchen.com/2010/02/chocolate-souffle-cupcakes-with-mint-cream/">mint</a>, berries, nuts and, well, dark chocolate. And since I&#8217;d come full circle with my reasoning, I made a batch of white chocolate brownies and a batch of dark chocolate brownies and hadn&#8217;t figured out what I was going to do next, only that nothing bad could happen from there.</p>

Makes 16 larger or 25 smaller brownies (the size you see pictured yielded 25)
10 tablespoons (1 1/4 sticks, 5 ounces or 141 grams) unsalted butter
1 1/4 cups (9 7/8 ounces, 280 grams) sugar
3/4 cup plus 2 tablespoons (2 7/8 ounces, 82 grams) unsweetened cocoa powder (natural or Dutch-process)

People who really, really love chocolate are dubious about cocoa. Even if you buy the most resplendent cocoa in the world, baking things with it that taste as rich as treats with bars of 70% is a rarity. Thus, if you&#8217;d told me about a killer recipe for cocoa brownies a couple weeks ago, I wouldn&#8217;t have believed you, but since then, two things have happened.</p>

<p>The first is that I had one. It was a tiny square, scattered among little tears of homemade marshmallows, near a puddle of homemade hot fudge sauce and carousel-ed around a <a href="http://eggbeater.typepad.com/shuna/2010/01/cocoa-nibbuckwheat-pannacotta-honey-marshmallows-cocoa-brownies-milk-chocolate-crunch-candy-shunas-f.html">cocoa nib buckwheat panna cotta</a> at 10 Downing last week that nothing short of blew my mind because did you know that the opposite of sweet in the world of chocolate needn&#8217;t necessarily be bitter? Sometimes it&#8217;s just not very sweet, period, so you can really taste the chocolate. It was awesome*, all of it.</p>

Rumor has it that pregnancy doesn&#8217;t just lead to swollen ankles, an insatiable need for peanut butter and a belly that causes what I will have to assume are otherwise polite people to ask if you&#8217;re having twins. Rumor has it that pregnancy quite often leads to teacup humans, and those teacup human need to be &#8220;delivered&#8221; from one world to another. <i>Oh my god, I am going to have to <b>birth</b> a baby, aren&#8217;t I?!</i></p>

My grandmother was a pretty fly lady, though I am not sure anyone called her &#8220;fly&#8221; in her lifetime. She loved anything glamorous and I&#8217;m pretty sure she saw the point of doing a whole lot in moderation. She&#8217;d send my sister and I (beware, frightening New Jersey-in-the-80s references ahead) glittery and puff-painted jaw clips and manes from the flea markets in Florida, she never discouraged the splattered and acid-washed jeans and neon slouch socks I wish someone would have formed an intervention over (shudder) and I specifically remember her finding me a pair of silver moccasins that in my mind <i>couldn&#8217;t have been any cooler</i>.</p>

<p>So, it should come as no surprise that when she made brownies, she didn&#8217;t just make any old brownies. Instead, they were three layer affairs; one chocolate, one mint and then a chocolate topping and she didn&#8217;t just stop there. Nope, Grandma took an <a href="http://www.tootsie.com/products.php?pid=105">Andes Candy</a>, divided it in half on the diagonal, and sank it like a shark fin into that chocolate and her &#8220;creme de menthe brownies&#8221; were possibly the most glamorous thing I had ever seen and my favorite brownie to eat.</p>

When I first saw this recipe on the homepage of marthastewart.com last month, my first thought was &#8220;ooh, how perfectly fall!&#8221; but then a second later, &#8220;wait, this can&#8217;t be right.&#8221; I mean, chocolate and pumpkin together? I have to admit, it sounds off to me.</p>

<p>In my overly-analytical head, pumpkin goes with nutmeg and cinnamon and ground ginger and pecans and bourbon and cream cheese and gingersnaps; chocolate, however, goes with a whole different slew of things, like scraped vanilla beans and walnuts or mint or peanut butter or cream cheese and maybe occasionally some chipotle powder. They&#8217;re different, you see, different, different, different.</p>

It&#8217;s amazing to me, and crushing to Alex, that in the year that I have posted to this site I have not produced a single peanut butter recipe. How could this be? I <i>love</i> peanut butter. I have waxed poetic about the <a href="http://www.flickr.com/photos/smitten/803028116/ ">peanut butter cookies from Billy&#8217;s Bakery</a> more than once. Reeses Peanut Butter Cups are the only widely-distributed candy I consider &#8216;worth it.&#8217; I am weak in the knees in the face of it, to the point that I actually make an effort to <i>not buy any</i>. It&#8217;s just not safe around me. Armed with a spoon and the door to the fridge swung open, it gets ugly. There is safety in distance.</p>

<p>And yet. I have such a soft spot for the Letters section of Gourmet Magazine, and in this month&#8217;s a reader requests the peanut butter brownie recipe from one <a href="http://www.butterwooddesserts.com/aboutus.asp">Butterwood Desserts</a> in West Falls, New York. Trying to fight off the craving, I immediately picked it apart. First of all, most peanut butter cakes and such are lackluster; the flavor is always too subtle for me and I question why we need to add flour, butter and sugar to something so perfect unadorned on a spoon. Second, when it comes to frosting brownies, I am staunchly &#8220;anti.&#8221; A great brownie shouldn&#8217;t need an extra slick of chocolate on top to make it work, and too often these frostings are cloyingly sweet and used to hide a quite average brownie underneath. <i>My</i> brownie recipes require no such pimping out. </p>

Alex&#8217;s birthday was Friday, and if there is one thing I think we all know by now about my <a href="http://smittenkitchen.com/about#Husband">sous-chef, assistant photographer, sometimes (cough<i>often</i>) dishwasher and starry-eyed compatriot</a> is that he is the true chocoholic in this family. There is rarely a dish, from <a href="http://smittenkitchen.com/2007/06/two-of-tarts">strawberry tarts</a> to <a href="http://smittenkitchen.com/2006/11/speckled-for-the-freckled">banana bread</a>, <a href="http://www.flickr.com/photos/smitten/569327636/">raspberry-filled sandwich cookie</a>s to <a href="http://smittenkitchen.com/2006/10/salt-cross-buns">bretzel rolls</a> that he does not insist could be improved by the addition of chocolate. Or cheesecake. Or brownies. But mostly chocolate. </p>

Last weekend, en route to the <a href="http://www.pixxiestails.com/archives/2007/01/bullriders_championship_madison_square_garden.html">Professional Bull Riders Showdown at Madison Square Garden</a>, and after some beers at what, without a doubt, must be <a href="http://www.nyc.com/restaurants/Blarney_Stone.54406/editorial.aspx">the most sordid bar in Manhattan</a>, Jocelyn&#8217;s roommate told me that even the sound of a baby crying could immediately bring on PMS-like symptoms for her. She&#8217;s <i>that</i> repelled by them. I laughed, because she&#8217;s damn funny, but then it hit me: earlier this month I held a friend&#8217;s 3-month old baby, marveled at his wrist-less arms and ankle-less legs (hidden beneath rolls, you see) and sniffed his tiny baby noggin and since then, I <i>cannot stop eating chocolate</i>. It&#8217;s getting worse and worse. What is usually just a two to three day bout of increased chocolate cravings every, oh, 28 days or so is incessant. Unending. Borderline obsessive, minus the borderline part. </p>

<p>And now we&#8217;ve graduated beyond <a href="http://smittenkitchen.com/2007/01/in-which-world-peace-eludes-me">the cookies that brought us no world peace</a> to cream cheese-swirled brownies. I try, I really do, to offset the inevitably amassed results of the fact that I am incapable of avoiding the ingestion of cocoa mass: <a href="http://smittenkitchen.com/2007/01/take-my-wife">boiled brussel sprouts</a>, dull vegetable udon soups, miles and miles of crunchy salads as well as distances on my other tormentor, the roller-blade like hulking machine mass at the gym, but all of this just dances around the fact that in the freezer, a few marbled beauties wait impatiently for our reunion. I mean, I couldn&#8217;t bring them <i>all</i> work, could I?</p>

I&#8217;m back! But not really, as I got home an hour ago, whipped up a batch of the only blondie recipe you&#8217;ll ever need for our <a href="http://pixxiestails.com">favorite blondie&#8217;s</a> umpteenth 25th birthday and now I have about 45 minutes to find something in my closet that camouflages my sling because ugh, it&#8217;s such an eyesore. (On the flipside, when I don&#8217;t wear it and someone bumps into me I get all outraged like &#8216;don&#8217;t you know my shoulder is injured?!&#8217; Well, no Debbie, they don&#8217;t.)</p>
<p>Although I am certain the last thing anyone wants to think about today is eating, baking, desserts or the next big cooking holiday, this recipe will usher in what I hope will be a month peppered with ideas for gifty kitchen confections. I know a lot of people this time of year make small gifts bags of baked goods, or larger tins for parties, and while I typically don&#8217;t, this gives me a chance, too, to try out a lot of bookmarked recipes while also never showing up at a party empty-handed. Also, I finally have an excuse to buy a candy thermometer.</p>

People, I&#8217;m getting as predictable as a Cathy cartoon. Take out your calendars, tick 28 days from now, and inevitably, this page will be topped with <a href="http://smittenkitchen.com/2006/09/outrageously-good-well-intentions">yet another</a> <a href="http://smittenkitchen.com/2006/08/the-abhorred-and-the-adored">chocolate-supporting confection</a>. All month long, I look at this dark food of the gods, daily, I submit to a bittersweet bite, yet rarely do I desire to transform it into things. Baking disperses chocolate across flour, eggs, sugars and etceteras. It dulls its mighty intent, and personally, I prefer my chocolate potent. </p>

<p>&#8220;Please convince me that it would be a bad idea to make brownies,&#8221; I&#8217;ll plead.</p>
<p>&#8220;Brownies?! You&#8217;re going to make brownies?! Woohoo! Hooray! Yay!&#8221; and that ear-to-ear grin terminates my attempts at hip-slimming righteousness in one flash.</p>
