As it turns out, the last days of October don&#8217;t awaken in me a desire to fly around on my broom, don a &#8220;sexy&#8221; nurse/maid/fireman outfit or even gorge myself on candy. Nope, according to a quick glance at my archives, apparently when Halloween approaches all I can think about is reinterpreting Rice Krispie Treats.</p>

<p>Unfortunately, I don&#8217;t seem to choose my recipes very well. Last year&#8217;s <a href="http://smittenkitchen.com/2008/10/peanut-butter-crispy-bars/">Peanut Butter Crispy Bars</a> were delicious, but had structural issues that irked me. And two years ago, I fell prey to a <a href="http://smittenkitchen.com/2007/11/caramelized-brown-butter-rice-krispie-treats/">Caramelized Brown Butter Rice Krispie Treat</a> that was all sorts of a styrofoam-textured disaster. Nevertheless, I haven&#8217;t been able to get them out of my head, so this year I decided I would conquer them once and for all. It helped that I knew <i>exactly</i> what went wrong the original dud of a clearly-untested recipe (hm, do I sound bitter?): the cereal to marshmallow ratio was unfeasibly high, more than double that of the original recipe and &#8212; small detail &#8212; marshmallows don&#8217;t caramelize very well, and should you succeed in getting them to, they don&#8217;t cool back down to anything gooey or soft. What a travesty.</p>

The first time I made marshmallows, well, I don&#8217;t think saying &#8220;it was a mess&#8221; adequately describes it. Oh, the <i>marshmallows</i> were successful; they even <a href="http://www.flickr.com/photos/smitten/518564214/">looked</a> and tasted like marshmallows, but yours truly? I ended up in a tangled web of marshmallow strings.</p>

<p><a href="http://www.flickr.com/photos/smitten/518590479/in/photostream/">It all went south</a> when I couldn&#8217;t resist the urge to scrape down the paddle and bowl (anyone else an obsessive bowl scraper? I cringe when things go to waste). The paddle was gunked to the bowl and the scraper was glued to the paddle and then &#8212; and it is my duty to implore you <i>not to do</i> this at home &#8212; you think, &#8220;well, I&#8217;ll just wipe off the paddle with my index finger&#8221; and then your index finger gets knit to the scraper and then you think &#8220;well, let me use my other finger to wipe this one off&#8221; and all of a sudden, you&#8217;ve got strands of marshmallow strung from each finger to the bowl, the mixer, the paddle, the scraper, each corner of the pan, your shirt, the floor and then your husband comes home just as you&#8217;re pleading <a href="http://www.flickr.com/photos/smitten/518562072/in/photostream/">&#8220;help! I&#8217;m all knotted up!&#8221;</a> and he instead gets the camera.</p>

<p>Yes, <I>crack</i>. As in "made with crackers", as in "crackly like toffee" but also in reference to the addictive nature of this stuff. I may make what seems like <a href="http://smittenkitchen.com/celebration-cakes/">an elaborate cake</a> a week these days, I might bake my own <A href="http://smittenkitchen.com/2009/03/homemade-chocolate-wafers-icebox-cupcakes/">icebox wafers</a> and <a href="http://smittenkitchen.com/2009/01/car-bomb-cupcakes/">fill and frost my cupcakes</a> but these things right here? They're the thing everyone asks for by name, and they take almost no time to make.</p>

<p>Thus, despite that fact that this recipe is incredibly easy to find elsewhere on the web, it only seems right to give it a home here as well. Because if there was one person out there that hasn't made it yet that makes it after reading this, my work here will be done.</p>

<p>You start with a foil and parchment-lined baking sheet, a fantastic thing if you, like me, hate doing dishes. (And seriously, if you <I>don't</i> hate doing dishes, who are you? And would you like to come over?) You lay out the cracker of your choice -- for this week's festivities, we used matzo but, trust me, if you try it with <a href="http://www.amazon.com/gp/product/B000F9Z29K">Saltine crackers</a>, it just might blow your mind -- in a single sheet, make a quick brown sugar caramel and bake it onto the crackers for a few minutes. Hot from the oven, you drop chocolate chips on top and when they've softened a minute later, spread them into a thin layer. Sprinkling it with sea salt or toasted, chopped nuts is optional, all that matters is that you share with me.</p>

<p>Oh, and this can be our little secret, but you might consider not putting all of the crack(ers) out when your friends and family come over. Because it might just disappear before you get any, and then you'll wake up the next morning, well, <i>fiending</i> and regretful that you didn't get any, with no choice but to make some more. Don't say these didn't come with a warning label.</p>

I am, without a better way to put it, swimming in nuts.* Appalled by the price of nuts everywhere around here but insisting that it wasn&#8217;t going to keep me from baking with them, I asked my mother out in the &#8216;burbs &#8212; a place where people are less confident they can get away with swindling $9.99 for 1.25 cups of pecans &#8212; to see if she could do better. She came back with fifteen pounds for about $30 from Costco, five of walnuts, five of pecan and five of almonds. It is, in a word, <i>awesome</i>.</p>

<p>And yet, despite the fact that many of my favorite recipes involve them in one way or another, I had not made even the slightest dent in the almonds and only a <a href="http://smittenkitchen.com/2008/12/pecan-sandies/">paltry one in the pecans</a> as of last week, and they&#8217;re taking up a lot of space in the pantry and freezer. (I believe this is called The Costco Effect.) Obviously it was time to break out the big guns, a recipe sure to be so addictive, pounds would disappear (from the pantry, not our guts, that is) at a breakneck pace and the only thing left to do (besides sit-ups) would be to ask my mother to go back to Costco again.</p>

Saying that you don&#8217;t usually care for brittle because it is, well, <i>awfully brittle</i> is definitely grounds for mockery.</p>
<p>But it&#8217;s true! I can&#8217;t tell you how unappealing I find stained glass-like sheets of amber caramel that you&#8217;re supposed to <i>willingly</i> bite into. You either get alarmingly sharp shards that stab you like a serial killer on the loose in your mouth, or it gets so gunked into the scoop of your molars, it takes a chisel to extract it.</p>

<p>Right, so where were we? My grievances with brittle in no way mean it can&#8217;t be good, just that it&#8217;s usually not. And previously, I never liked the stuff enough to find The Recipe, the one that will be all you need. Fortunately, with such inspiration as <A href="http://wednesdaychef.typepad.com/the_wednesday_chef/2007/12/karen-demascos.html">Luisa</a> and <a href="http://nymag.com/restaurants/articles/recipes/peanutbrittle.htm">Karen Demasco</a>, this was perfect on the first try: buttery with an awesome depth of flavor that came from some accidental slightly overcooking and sea salt. Taking a bite, the pepitas just crackle within the caramel, and not so hard that it shatters everywhere.</p>

<p>This all started with <A href="http://homesicktexan.blogspot.com">Homesick Texan</a>. No wait, this all started with last year&#8217;s <a href="http://smittenkitchen.com/2006/11/candy-girl/">orangettes</a>, to this day one of the most popular posts on this site. No wait, this all started with a lifelong (can you say that? when you&#8217;re just 31?) love of grapefruits. My favorite way to eat them is the same exact way my mom showed me, halved in a bowl with each section loosened with a arched, double-serrated grapefruit knife. First, I&#8217;d pop all of the sections into my mouth in probably under two minutes flat. But then, then came the &#8220;grapefruit soup,&#8221; I&#8217;d call it. Mom would help us scrape all of the residual grapefruit bits into the bowl, then squeeeze every last bit of juice, discard the empty shell of a peel and this, this my friends is the best grapefruit juice you&#8217;ll ever drink in your life. You must drink it straight from the bowl. I could live on it, and it alone.</p>

<p>Which brings us to the Homesick Texan, who <a href="http://homesicktexan.blogspot.com/2007/12/homesick-texan-holiday-gift-guide-2008.html">mentioned in December</a> that &#8220;everyone knows the juiciest, largest and sweetest ruby red grapefruit comes from the Rio Grande Valley&#8221; and it was funny, because I hadn&#8217;t known that at all. But given the price of the grapefruits we&#8217;d been seeing in the stores ($2 a pop), their sorry state (dented but still appallingly shiny with wax) and their flavor (average at best) I was just itching to find out. So, we ordered ourselves a little sampler from <a href="http://www.stxorganics.com/">South Texas Organics</a> and quite a few days later were presented with exactly what we were promised: the very best ruby red grapefruits, from South Texas.</p>

My roommate at the time had more suitors than she could count on two hands and both feet, thus I didn&#8217;t even bother trying to keep up, but there was this one&#8211;and I never met him, but still called him my favorite&#8211;who insisted upon &#8220;borrowing&#8221; her for the afternoon of her birthday and at <a href="http://www.metmuseum.org/">Metropolitan Museum</a> presented her with two items: <a href="http://www.amazon.com/gp/product/0385335660?ie=UTF8&#038;tag=smitten-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=0385335660">Kissing in Manhattan</a> and <a href=" http://www.lamaisonduchocolat.com/commerce/en/US/US/product/U-C/Plain-truffles">a box</a> of chocolate truffles from <a href="http://www.lamaisonduchocolat.com/fr/">La Maison du Chocolat</a>.</p>
<p><a href="http://www.amazon.com/gp/product/0385335660?ie=UTF8&#038;tag=smitten-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=0385335660">Kissing in Manhattan</a> was gorgeous&#8211;the rare book in Alex and my towering bookcases that we both, two years later, came with a copy of&#8211;but the truffles were something else. Not only were they the most rich and hands-down putting to shame any and every chocolate I had ever encountered previously in my life, they were painfully expensive. It just wasn&#8217;t fair. </p>
<p>In an effort to build my karma they became my go-to hostess gift and it was because of this that I learned one year at a holiday dinner where a Gourmet editor was a guest that the secret of the Robert Linxe&#8217;s <a href="http://www.lamaisonduchocolat.com/fr/">La Maison du Chocolat</a> Truffles were not sealed in an offshore vault along with the original Coke recipe and the location of Jimmy Hoffa but free for the clicking on <a href="http://epicurious.com">Epicurious.com</a>.</p>

As much as I have said more often in the last couple months than you should ever let me get away with that I am <i>so busy!</i> and <i>no time!</i> the truth is that really, truly having no time for the things I really want to have time for terrifies me. I always wonder: are we really so busy or are we just busy being busy? Are there truly &#8216;not enough hours in the day&#8217; or are we just not using the ones we have well enough? I feel if I allow myself to <i>sorry can&#8217;t, too much going on right now</i> I might fall down a slippery slope wherein I start saying that even before I have considered what I am busy with. Come on, surely you know the type.</p>
<p>What I mean is: there is a woman with two children, one under a year old, in our west coast office that wields our interoffice overnight mail for the very best of causes: baked goods. Got a promotion? New employee? Had a bad day? Leaving for greener pastures? Any and all events, no matter how small or mighty, are greeted with a bundle of butter, sugar, chocolate and‚ well, I haven&#8217;t figured out all of the ingredients yet, so I just call it &#8220;crack&#8221; and you will hopefully know that I mean that it is a very good thing. </p>

1 cup hazelnuts
3 1/2 ounces good bittersweet chocolate

I confess that I roll my eyes a bit at the overhearing of some new truffle recipe. I don&#8217;t mean to over-simplify them &#8212; yes, fabulous chocolatiers from time to time find new ways to flavor, construct or adorn these decadent orbs of Awesome &#8212; but it all simmers down to the same thing: they&#8217;re just firm ganache, and ganache is just melted chocolate mixed with cream.</p>
<p>If you, like us, feel that tiny truffles are nothing short of the most transcendent and uplifting vehicle for chocolate consumption, you should make them because they&#8217;re ridiculously easy. Plus, unless you&#8217;re buying yours at <a href="http://smittenkitchen.com/2006/12/chocolate-concise">$2.50 apiece</a>, they&#8217;re pretty much always better homemade.   </p>
