When it comes to  off-the-cuff and mostly unplanned cooking, I have a tendency to do this thing that, depending on your perspective, is either a total shame or completely understandable: I don&#8217;t tell you about it. I&#8217;ll have thrown together a salad or a sandwich or some odd assortment of vegetables and couscous and made us lunch or dinner and Alex will say, &#8220;will you put this on your site?&#8221; and I&#8217;ll say &#8220;Of course not. Is there some shortage of recipes for sandwiches or roasted vegetables on the internet? Feh, it would be <i>totally boring content</i>.&#8221; [Yes, I actually talk like this. It's embarrassing and I should keep to myself.]

<p>Anyway, I made one of these Deb Dishes the other night and again snorted when Alex suggested I share it with you, until I was about three-quarters of the way done with mine and I realized that just because talking about <i>caprese</i>, or my own hacked version of it, isn&#8217;t exactly the height of cooking originality, doesn&#8217;t mean that someone wouldn&#8217;t enjoy eating exactly what we had in front of us.</p>

<p>So let&#8217;s talk about this cubed-up caprese salad I often make for barbecues or pot-lucks or whenever I want to eat something really summery without doing more than a lick of work: I dice mozzarella and tomatoes together, drain and rinse a can of white beans and toss it with a mixture of pesto (though slivered basil works in a pinch) and red wine vinegar and season it generously with salt and pepper. Sometimes I even add bits of proscuitto, if we have any around, and I&#8217;m feeling wild. Yes, <i>revolutionary</i>, I know.</p>

If you think my <a href="http://smittenkitchen.com/2009/05/broccoli-slaw/">slaw</a> <a href="http://smittenkitchen.com/2009/05/slaw-tartare/">affliction</a> is bad, let me introduce you to my potato salad habit. There&#8217;s that <a href="http://smittenkitchen.com/2007/07/eyes-wide-open-all-the-time/">everything-but-the-kitchen-sink version</a>, with its pickles and onions and vinegar and mayo and mustard and celery and then hard-boiled eggs, as if there were a risk of potato salad monotony. Then there&#8217;s the stepped-up <a href="http://smittenkitchen.com/2007/06/spuds-most-worthy/">dilled version</a>, where you start by making your own cucumber pickles the night before and then finish it with radishes. It&#8217;s heaven in a Central European bowl. Oh, and now there&#8217;s this pesto too, just perfect for the mayo-phobic out there and look, it has green beans! It must be healthy.</p>

<p>This recipe comes courtesy of my <a href="http://smittenkitchen.com/2009/05/grilled-shrimp-cocktail/#comment-288820">green tomato and okra-frying friend Ang</a>, who says it&#8217;s her go-to favorite. But what captivated me about it was the play on that Ligurian pasta dish called <i>trofie</i> with potatoes, pesto and green beans that several readers notes when I made <a href="http://smittenkitchen.com/2009/03/penne-with-potatoes-and-rocket/">a riff on it a couple month ago</a>. I played around with it a little, deconstructing the pesto so the toasted pine nuts became a crunchy garnish and finishing it with wide flakes of parmesan. It was delicious and summery and my only regret was not taking any of the leftovers home so I could eat it today for lunch.</p>

I wish I could tell you that the last meal cooked in the first Smitten Kitchen was a triumph, a fitting coda to four-plus years in a sun-drenched Manhattan kitchen with enough space to put everything away (not that I&#8217;m pointing fingers or anything, <a href="http://smittenkitchen.com/2009/04/cinnamon-swirl-buns-so-much-news/"><i>new kitchen</i></a>) and space enough for two people (and at least one growing midsection) to settle comfortably within it. Alas, that was not the case.</p>

<p>Instead it was prepared in the evening (when even the skylight couldn&#8217;t be taken advantage of), in kind of rushed (as in, &#8220;why am I cooking dinner when I should be packing things, or pretending to pack things while actually reading the internet?&#8221;) and was less of a &#8220;I&#8217;ve always wanted to make this&#8221; and more of a &#8220;if we&#8217;re packing up the kitchen tomorrow, let&#8217;s get on last meal in tonight.&#8221; Ah, the glamor! But isn&#8217;t this so often what weekday night cooking is about?</p>

I have a confession to make: For years, I have been cooking a dish that I love very very much but I haven&#8217;t told you about it because it comes from two words that I cannot bring myself to publicly own up to.* Especially on a site where if you suggested I use one, I&#8217;d suggest you haven&#8217;t been paying attention.</p>
<p>It&#8217;s a <b>box mix</b>, people. And it makes the most fantastic rajmah, or kidney bean curry. Wait! Let me explain. Long before I had cooked a single Indian dish, I was overwhelmed at the thought of it. I didn&#8217;t have the spices. I didn&#8217;t know which spices I&#8217;d want. I was sure I&#8217;d use them all wrong. There&#8217;s like an art and a science to this and I am a dilettante in the world of Indian cooking.</p>

<p>And one day we were at Whole Foods, and they of course had some cooking samples out, these provided from <a href="http://www.aroracreations.com/catalog/index.php">a company that was packaging Indian spice mixes for classic dishes</a>, for which they helpfully provided recipes on the back. The aloo gobi was okay. The chicken tikka masala was, you know, not bad either. But the kidney bean curry? Swoon. We took it home with us that very night.</p>
<p>In the years since, I have found Indian recipes I can&#8217;t get enough of. Let me just get this out of the way before I begin: I&#8217;m a little embarrassed by this meal. Not because it took 10 minutes to make, but because it came entirely from things that were already packaged and it tasted&#8230; well, not bad, but certainly not like I made any great effort. Even in New York City, where you can get anything delivered at any moment&#8217;s notice, there are days when one more meal that arrives in plastic-lidded foil containers will send you over the edge. I made this on one of those days. It was 8 p.m., we were both starving and I had one chance to ask Alex to grab something at the store on his way home and I didn&#8217;t want to miss it. So I Googled probably one of those most popular searches on the Internet, &#8220;10 minute meals&#8221; and, well, that pretty much brings us up to today.</p>

I&#8217;ve confessed again and again that I&#8217;m just not the kind of person who likes to eat things repeatedly. What&#8217;s bad for, I don&#8217;t know, <i>using up leftovers</i>, however, is good for having the kind of site that updates three times a week with new recipes. So I&#8217;d say it all evens out. But every so often, actually &#8212; way too rarely, rarely &#8212; I hit on something that I cannot stop eating. For weeks, months. And now, we&#8217;re over a year and I&#8217;m telling you, if I had a butternut squash at home right now, we&#8217;d already have dinner made.</p>

<p>I&#8217;ve <a href="http://smittenkitchen.com/2008/02/three-from-the-files/">mentioned this salad before</a> but I realize that this is one of those recipes I&#8217;m going to refresh as often as I can get away with. The second I had these ingredients together &#8212; lemon, tahini, butternut squash, garlic, chickpeas &#8212; I couldn&#8217;t believe it was the first time. They were made to be together, and in the times that I&#8217;ve had them apart in other recipes, I always know what they&#8217;re missing.</p>

<p>It has been over one week since I told you about the <a href="http://smittenkitchen.com/2009/01/light-wheat-bread/">Light Wheat Bread</a> (and just as long since we&#8217;ve been out of it, sob), a post I ended with a promise to tell you about my new favorite sandwich next. But instead I told you about <a href="http://smittenkitchen.com/2009/01/clementine-cake/">Clementine Cakes</a> and then <A href="http://smittenkitchen.com/2009/01/mushroom-bourguignon/">Mushroom Bourguignon</a> and <a href="http://smittenkitchen.com/2009/01/sugar-puffs/">Chouquettes</a> and do you know what happened? Not a single person griped that they were owed a sandwich. Because really, who does that?</p>

<p>I take issue with the banality of most sandwich recipes. I will actually change the channel if I see a food program that walks viewers through making one of any kind. I mean, is this how low the bar has dropped for &#8220;cooking&#8221;? But it&#8217;s not the shows that are to blame, I think, or not fully: it&#8217;s the sandwiches. Most sandwiches are dull. Some sliced stuff and schmear between two uninspired slices of bread. Who can stay awake for that?</p>

Our first night in Paris in October, we <a href="http://smittenkitchen.com/where-we-ate-in-paris/">had dinner at a great, inexpensive Moroccan restaurant</a> in the 3&#232;me called Chez Omar. The specialty is couscous, and the various stews you ladle over it. Alex had the chicken, I had the vegetables, but I hear we really missed out on the Royal, which is <a href="http://chezchristine.typepad.com/chez_christine/2005/10/couscous_revela.html">a big mess of meat</a>. Served family style, the food was unpretentious, light and so healthy, I made a mental bookmark to try my hand at it when I got home.</p>

<p>Which, being me, I promptly forgot about. What jogged my memory was a version of a Moroccan vegetable stew on <a href="http://www.treasuresofmorocco.com/moroccan-tagine-cookware-couscousier-c-22.html">Ask Aida</a> on the Food Network last week. I think that Moroccan cooking can be intimidating: I don&#8217;t have a <a href="http://www.amazon.com/gp/product/B001IKK2EK?ie=UTF8&#038;tag=smitten-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=B001IKK2EK">1 3/4-Quart Le Crueset Cast Iron Moroccan Tagine in Caribbean Blue</a> for the low price of $200, nor do I have one I picked up for $2.95 at the central souk in Marrakesh in 1968. (Okay, I wasn&#8217;t even alive in 1968 but for some reason, everyone but me seems to have a story about something fabulous they bought there when backpacking across the world and I am jealous.) I also don&#8217;t have a <i>couscousier</i>, yet astoundingly, I was able to pull off this squash and chickpea stew for dinner on Sunday, and it was delicious.</p>

I know, chickpea salad? What a letdown, right? Well, what can I say except that there is simply no way to chase <a href="http://smittenkitchen.com/2008/11/chocolate-toffee-cookies/">cookies with bits of tangy toffee</a> and bitterish walnuts in a cookie that is pure brownie awesomeness in the middle, replete with the shiny crackled lid&#8230;</p>
<p>I&#8217;m sorry. I just had to get one more. I can stop anytime. (Also, we&#8217;ll be out soon, anyway.)</p>

And this one&#8211;yet another great find from Deborah Madison&#8211;is no bad place to start: fresh roasted pepper strips, capers, a little mint and a little garlic, it was just <a href="http://smittenkitchen.com/2008/11/fennel-prosciutto-and-pomegranate-salad/">another</a> <a href="http://smittenkitchen.com/2008/11/cauliflower-salad-with-green-olives-and-capers/">salad</a> in a <a href="http://smittenkitchen.com/2008/11/onion-tart-with-mustard-and-fennel/">spread</a> that has turned out to be one of my favorite thrown-together dinner parties in ages. Almost everything made in advance, I actually got to (get this) sit down and hang out with my friends! Revolutionary, I tell you.</p>

<p>About a month ago, I told you that tomato season is the highlight of my culinary year, or at least the highlight of the parts I can buy at a Greenmarket. And then I went on about <a href="http://smittenkitchen.com/2008/08/slow-roasted-tomatoes/">slow-roasted tomatoes</a> for a few paragraphs and proceeded to leave you right there. At slow-roasted tomatoes. Because you know what? Once you discover them, you might lose the few weeks that follow.</p>

<p>But eventually, you get into what I call Tomato Season, Phase 2. This means you&#8217;ve already had a month of slow-roasted and simply dressed tomato salads, and you&#8217;re ready to actually use tomatoes as an ingredient again. You get curious. You forget that you&#8217;ve got interminable months ahead of dry, flavorless, pink-hued cotton-like tomatoes, believing that there are enough tomatoes to last you until spring. I&#8217;ve got four recipes like this in the queue.</p>
