I&#8217;m pretty sure I had a normal relationship to all things stringy and green when I started this site, but if my archives are any indication, at some point in 2008, something shifted and I became a green bean fiend. It might have even been May of that year, a month that be began with a <a href="http://smittenkitchen.com/2008/05/green-bean-and-cherry-tomato-salad/">simple summery salad</a> but by month&#8217;s end, I was forcing Alex to endure takeout from a medicore French restaurant up to twice a week, just so I could have their side dish of skinny green beans with a pat of butter, some shallots and tomatoes and a squeeze of lemon juice. (When he cut me off, I simply went into the kitchen and <a href="http://smittenkitchen.com/2008/05/haricot-vert-with-shallots/">attempted them myself</a>.) I began remembering which restaurants cooked green beans perfectly each time, like the one on 7th Avenue that served them with roast chicken, buried in <i>jus</i> under a pile mashed potatoes and I literally ate them before the salty, crispy skin. I began judging places harshly if my beans flapped or flopped on a plate. I could speak unhealthily at length about various cooking times and what texture they&#8217;d leave the beans.</p>

<p>Little has changed since May of 2008, well, except now a certain <a href="http://www.flickr.com/photos/smitten/5451720483/">12-toothed toddler</a> had joined me in my green bean enthusiasm. We cook a pound at least once a week and eat them with nothing but a sprinkle of sea salt on top. And at least once a week I force us to order takeout from a restaurant just because they make a great green bean salad. And last week, we were able to sneak out to <a href="http://nymag.com/restaurants/features/69772/">a new pasta restaurant in our neighborhood</a> and look, the pasta was great, but this is what I really remember: green beans, lightly pickled red onions, thinly shaved fennel, slivers of celery and almonds, so well toasted their insides were the color of coffee.</p>

High on the list of dishes I&#8217;d like to be able to make without a second thought, a special trip to a special store and that I hope to still be cooking when we spend our days in his-and-hers creaking rocking chairs, lamenting that Jacob never calls us anymore, is a hearty white bean stew.</p>

<p>And never has my need to get a recipe like this down been more urgent, given the following confluence of events: 1. A kid who is getting more and more into rejecting food, but shows a keen interest in beans and anything cooked in a tomato-y sauce. 2. A mama who is near the end of her tether trying to fit an impossible amount of ingredients in her 2 (yes, <i>two</i>) kitchen cabinets and revels in a recipe that will use up multiple cans of beans, a box of tomatoes and a carton of broth and 3. A website audience that will likely hightail it out of here if I present you with one more recipe in a row that hinges on <a href="http://smittenkitchen.com/2010/12/milk-punch/">cream and booze</a>, <a href="http://smittenkitchen.com/2010/12/crescent-jam-and-cheese-cookies/">butter and cheese</a>, <a href="http://smittenkitchen.com/2010/12/spicy-gingerbread-cookies/">butter and sprinkles</a> or <a href="http://smittenkitchen.com/2010/12/broiled-mussels/">butter and wine</a>. It&#8217;s January, after all, and we have resolutions to attend to! Resolutions that probably do not include butter&#8230; That&#8217;s for February, after all.</p>

Odds are, this week is full of sugar for you. Chewy sugar, hard shiny sugar, sugar molded into candy corn, fluffed into <a href="http://smittenkitchen.com/2009/06/springy-fluffy-marshmallows/">marshmallows</a>, coating <a href="http://www.amazon.com/gp/product/0811876373?ie=UTF8&#038;tag=smitten-20&#038;linkCode=as2&#038;camp=1789&#038;creative=390957&#038;creativeASIN=0811876373">adorable little popsicles of cake</a>, <a href="http://smittenkitchen.com/2009/11/salted-brown-butter-crispy-treats/">wound with brown butter around grains of puffed rice</a> and that doesn&#8217;t even include the peanut butter cups you&#8217;ll pilfer from your kid&#8217;s trick-or-treat bucket this weekend followed by the sweet slide from Thanksgiving&#8217;s marshmallow-topped sweet potatoes and December&#8217;s minty candy canes.</p>

<p>I, for one, could really go for a salad right now. I&#8217;ve been roasting a lot of squash and sweet potatoes lately, usually for the half-toothed member of our family and one day, I was looking to turn it into more of a fall salad and I stumbled upon a recipe from Bon Appetit. I nixed the arugula because the stuff I found at the market was spotty, and anyway, (gripe alert!) I like challenging myself to make salads that don&#8217;t hinge on leaves that are only in season a very small fraction of the times of the year people insist you should eat them. (End gripe.) I used a butternut squash instead of a pumpkin because they seem to roast up in cubes better, and also because they&#8217;re a much easier shape for my little sherpa to hold in his lap (and only <i>occasionally</i> <a href="http://www.flickr.com/photos/smitten/5121201852/">gnaw on</a>) as we head home from the market. I added toasted butternut squash seeds because I love some crunch with my salads and do hope you know they toast up almost as delightfully as pumpkin seeds. Finally, I used black lentils because that&#8217;s what I had in my pantry and what&#8217;s prettier in the last week of October than a black and orange medley?</p>

[Er, croutons not pictured.] Here&#8217;s the thing: If you told me you were serving succotash with or for dinner, I&#8217;d inwardly groan. People, I&#8217;ve had all sorts of succotash &#8212; a summery stew of corn and lima beans, often with tomatoes, yet still so bland that no added butter or cream saves it for me, and when adding butter and cream don&#8217;t save something for me, you know something is terribly wrong &#8212; and can&#8217;t think of one that I wanted to run home and make for myself. It might be because it&#8217;s usually in the off-season, when the above come frozen and no, it&#8217;s just not the same. It might also be because I once had a roommate that would open cans of succotash, <i>not</i> drain it, heat it in the microwave and eat it straight and guys, it&#8217;s been many, many years and still, my stomach turns. Don&#8217;t ever live with me. I&#8217;m a jerk.</p>

<p>But this is different. This was a midsummer dinner dream, the result of another bleachingly sunny, sauna of a day when I staggered around the market and realized if I put this stand&#8217;s corn and that stand&#8217;s shell beans and those purty tomatoes together, I might make a succotash that was worth writing home about. I wondered if you could pork it up. I wondered if I could pass it off as a main course. I came home with the haul of all hauls and discovered, as I often do, that <a href="http://www.epicurious.com/recipes/food/views/Herbed-Summer-Succotash-102026">Gourmet</a> (moment of silence) had beaten me to it more than a decade ago. I love it when they do that.</p>

First off, this dish is not called &#8220;spinach and chickpeas&#8221;, it is <i>espinacas con garbanzos</i>. Don&#8217;t you agree? &#8220;Spinach and chickpeas&#8221; is something you eat because you should &#8212; it is healthy and you aspire to be. Espinacas con garbanzos is something you eat because it sounds sexy, and doesn&#8217;t taste half bad either. It&#8217;s hearty and smoky with a little kick, you eat it on little fried bread toasts at a tapas bar in Spain.</p>

<p>Or, you know, in New York City on another brutally rainy March night. My friend Ang had a tapas pot-luck last Friday (the baby <a href="http://www.flickr.com/photos/smitten/4440395875/">ditched us for a better party</a> at his grandparents house) and, yes, I brought a Spanish dish to a Spanish party that did not include a single format of pork. Wild! Hey, I figured others would have the chorizos and jam&#243;n serranos covered. Me, I wanted some Spanish comfort food. I&#8217;d tried a version of this dish a few years ago, thanks to the sweet nudging of <a href="http://lobstersquad.blogspot.com/2007/02/espinacas-con-garbanzos.html">Ximena at Lobstersquad</a> and instantly loved it. It sounds like it would be too simple to hold your interest, perhaps something you&#8217;d eat because you &#8220;ought&#8221; to, but it tastes like something you&#8217;ll crave again and again.</p>

My latest snap of cravings for Indian food hit a couple weeks ago, and because I haven&#8217;t learned anything over my two stints in the East Village, we ordered in from a restaurant on 6th Street and received puddles of oily, listless and weakly spiced curries that we dragged our way through only to be rewarded with bellyaches. Also, regret. I have <a href="http://smittenkitchen.com/recipes/#Indian">an archive of Indian recipes</a> I make several times a year, that I crave like clockwork as soon as we hit a cold snap and never disappoint, a cabinet full of robust rust and mustard-colored powders and seeds and yet I let someone else put lackluster chana masala in our bellies.</p>

<p>I&#8217;ve made a slew of chana masalas &#8212; a Northern Indian chickpea stew with tomatoes &#8212; but none have made their way to you because while they&#8217;ve all been edible, with bowls licked clean as there are exactly no intersections of chickpeas and tomatoes that I won&#8217;t gobble down, I had yet to find The One. Many were closer to a spiced tomato sauce with chickpeas in it; few had the spice assault I was looking for and none had that <i>thing</i>, a sour note, you find in great Indian food but is more elusive to American home cooks with a curry habit.</p>

Or, the way we talk about it, <i>thhhuuuuh brisssssket</i>, it&#8217;s deliciousness making our syllables stretch out melodramatically. We pulled it into tacos with slaw and pickled onions and it was a great end to a great year. But I bet I know what you&#8217;ve been wondering since then, &#8220;But no appetizer?&#8221; Well, let thie question vex your brain no longer: we had soup. <p>My friend <a href="http://www.pixxiestails.com/">Jocelyn</a> made a wonderful black bean soup and she topped it with a toasted cumin seed crema and I just about died, the crema was so good. I mean, the soup was delicious but the crema was one of those toppings that was in lock-step with the soup: the richest, creamist, smokiest accent to a spicy, hearty soup. Since I&#8217;ve been slow cooker obsessed since that very day, I vowed to make a version entirely in my new BFF, and to top it with that toasted cumin seed cream. Frankly, the soup is just an excuse to get to it.</p>

So here&#8217;s a little eating-out confession: When we go out to restaurants, no matter how old-school posh or hot-new-It-chef-on-a-grungy-block, I rarely find myself moved to exclamation points over a piece of steak or a pasta dish; instead, it most of my ooh-ing and aah-ing is formed over the earnest piles of beans and grains and greens that form a bed for the main attraction. I&#8217;m always applauding the way a chef managed to get such flavorful beans, grains and even unloved greens, cooked so perfectly that I clean them out long before I stick my fork into the duck breast. I guess what I am trying to say is: A lot of people cook steak well. Making kale and wheat germ taste like nirvana itself is what really blows my mind.</p>

<p>It&#8217;s also, sadly, the place where the gap between what I pay others to cook and what I whip up at home is the greatest. I miss those sauces &#8212; those puddles of concentrated buttery rich brothy flavor! I want to splash in them! &#8212; I miss all of the in between spaces on my plate. I vow to conquer that this year. Bring on the puddles! </p>

When it comes to  off-the-cuff and mostly unplanned cooking, I have a tendency to do this thing that, depending on your perspective, is either a total shame or completely understandable: I don&#8217;t tell you about it. I&#8217;ll have thrown together a salad or a sandwich or some odd assortment of vegetables and couscous and made us lunch or dinner and Alex will say, &#8220;will you put this on your site?&#8221; and I&#8217;ll say &#8220;Of course not. Is there some shortage of recipes for sandwiches or roasted vegetables on the internet? Feh, it would be <i>totally boring content</i>.&#8221; [Yes, I actually talk like this. It's embarrassing and I should keep to myself.]</p>

<p>Anyway, I made one of these Deb Dishes the other night and again snorted when Alex suggested I share it with you, until I was about three-quarters of the way done with mine and I realized that just because talking about <i>caprese</i>, or my own hacked version of it, isn&#8217;t exactly the height of cooking originality, doesn&#8217;t mean that someone wouldn&#8217;t enjoy eating exactly what we had in front of us.</p>

<p>So let&#8217;s talk about this cubed-up caprese salad I often make for barbecues or pot-lucks or whenever I want to eat something really summery without doing more than a lick of work: I dice mozzarella and tomatoes together, drain and rinse a can of white beans and toss it with a mixture of pesto (though slivered basil works in a pinch) and red wine vinegar and season it generously with salt and pepper. Sometimes I even add bits of proscuitto, if we have any around, and I&#8217;m feeling wild. Yes, <i>revolutionary</i>, I know.</p>

There&#8217;s that <a href="http://smittenkitchen.com/2007/07/eyes-wide-open-all-the-time/">everything-but-the-kitchen-sink version</a>, with its pickles and onions and vinegar and mayo and mustard and celery and then hard-boiled eggs, as if there were a risk of potato salad monotony. Then there&#8217;s the stepped-up <a href="http://smittenkitchen.com/2007/06/spuds-most-worthy/">dilled version</a>, where you start by making your own cucumber pickles the night before and then finish it with radishes. It&#8217;s heaven in a Central European bowl. Oh, and now there&#8217;s this pesto too, just perfect for the mayo-phobic out there and look, it has green beans! It must be healthy.</p>

<p>This recipe comes courtesy of my <a href="http://smittenkitchen.com/2009/05/grilled-shrimp-cocktail/#comment-288820">green tomato and okra-frying friend Ang</a>, who says it&#8217;s her go-to favorite. But what captivated me about it was the play on that Ligurian pasta dish called <i>trofie</i> with potatoes, pesto and green beans that several readers notes when I made <a href="http://smittenkitchen.com/2009/03/penne-with-potatoes-and-rocket/">a riff on it a couple month ago</a>. I played around with it a little, deconstructing the pesto so the toasted pine nuts became a crunchy garnish and finishing it with wide flakes of parmesan. It was delicious and summery and my only regret was not taking any of the leftovers home so I could eat it today for lunch.</p>
