One of my probably most annoying insistences in the 15 years that I didn’t eat meat was that I suspected people didn’t really like it as much as they thought they did. Take bacon, no doubt the first thing that comes to mind when some leaf-horfing former vegetarian has the audacity to suggest that you could live without flesh. You love the way it’s smoky and salty and crispy and fatty, right? But how much of that has to do with the actual taste of pork belly, versus the way we’ve treated it to make it even more amazing? How much of Korean short ribs are about the unseemly delicious marinade, how much of Southern fried chicken is about that shattering crust, comprise mostly buttermilk, flour and grandma love? How much of barbecued ribs is about the gloriousness of the meat on the bone versus the long tenderizing, smoking and the sweet-salty-spicy stuff we mop or crust on top? [Sorry, I have to stop this paragraph right here so I can eat it.]

September has always been my favorite month. The grimy, relentless sauna that is New York City in August finally lifts and we can almost always count on a solid week (or more) of impossibly sunny low-humidity days that I consider my personal obligation — as happy repentance for all the above griping — to spend entirely outdoors. My best memories are from Septembers; this may sound weird, but I remember going to work on the morning that nobody knew yet would be 9/11 and thinking it was as clear-skied and gorgeous out as a day could ever be. Two years later, I met my husband on that day. Six years and a few days after that, we met our baby boy, and I distinctly remember checking into the hospital on a hot summer day and checking out three days later when it was unquestionably fall, disoriented.

The last time I incubated of future generation of my family, my OB’s office — a place you cumulatively spend a spectacular amount of time over the course of 40 weeks — was diagonally across the street from the Upper West Side Shake Shack, and I only ate there once. I understand if this means we can no longer be friends; I am personally embarrassed to know this about me too. Where were my priorities? I have spent years mourning this missed opportunity to not only eat a weekly Shackburger but to have made better use of my last weeks of kid-free leisurely lunches for years to come. The reason is even less sympathetic: I didn’t like hamburgers, or so I thought. They were so thick, so dauntingly large and one-note, so soft and damp inside, I couldn’t for the life of me imagine what made them popular.

I may have suddenly, and at least a month earlier than I’d hoped, reached the slightly less awesome phase of pregnancy, which I suspect is nature’s way of ensuring that despite all of the great things about gestating — thick, shiny hair! elastic-waist pants! people actually encouraging you to be lazy! — you will have little desire to stay this way forever.

potatoes with soft eggs and bacon vinaigrette

I was going to offer today a kind of loose apology. “Sorry, guys, for all of the potatoes and eggs and utter randomness of recipes this winter,” and then shamelessly go onto blame this approaching third-trimester (ack, too soon) situation with its still-unpredictable food cravings I’m in but then I realized: this is actually nothing new. There isn’t a recipe in the almost 9 years and 975-deep archives on this site that hasn’t been fueled wholly by hankerings, usually arbitrary ones. Some people have lesson plans and editorial calendars, I have whims. It’s just now I have a tiny thing — a future rock star, if the dance party from 2 to 6 a.m. last night is indication — to blame for it.

I swear, this wholesome-looking meal isn’t penance for anything. It’s not a budget-friendly apology for the frenetic unplanned redecorating project or atonement for the fact that I’ve basically only wanted to eat chocolate, peanut butter, bread and pasta for the last 22 weeks. It’s not compensation for the frosting that didn’t make it onto the cake and was eaten instead with a spoon, or the impulsive meringues last weekend. It’s only ever-so-quietly a warning that the next thing coming on this site is so decadent, you might wish to advance yourself some greens, grains and beans.

Several years ago, because we didn’t have a kid yet, didn’t know about things like school break schedules and figured midway through February was as good of a time to escape the snow as any, we decided to get away to someplace warm and winter-free during Presidents’ Day week. We found ourselves smack dab in the middle of a beach resort that had to have easily been 75% children, and the kind that were at that time my worst nightmare of what kids could be [insert yours here, then multiply it as far as you can see] and we decided to both never have kids and never ever go away on Presidents’ Week again.
