I found your recipe and followed it except I didn&#039;t have shallots on hand so I used some finely minced onion and garlic and I enjoyed nibbling the peel and tasting the purple potatoes straight out of the pot but I loved the olive oil and lemon and the other seasonings and then it hit me SKORDALIA....so there it is purple Skordalia...beautiful.  I copied the URL for a skordalia recipe above so you can see what I mean.  I like these warm but they work room temperature or cold too.</description>
