Okay I can’t help but put my two cents in. The other day I made a pot of beans and had some for dinner. Per my usual method, I salted only after cooking them completely. They were delicious and creamy. I left the beans in the pot on the stove and had some more beans an hour later. But at that point, they were tough!!
Maybe it was the sitting, maybe it was the salt, but I would wager it depends on what kind of beans you use and whether they’re mixed with other things. It might be an old wives tale, but I feel like I have to keep following this one!
I was under the impression that the reason you don’t wash a mushroom is because it makes them turn brown. The absorbtion thing is news to me.
