maple syrup primer
I can’t even say the words “maple syrup” without swooning–”mmmaaaple”–I love it that much. But did you know that global warming is having devastating effect on sugar makers in New England? I say it’s all the more reason to support these syrup producers, and banish that high-fructose corn syrup and artificial caramel colored stuff masquerading as “pancake syrup” once and for all. Fresh maple syrup keeps unopened in the fridge for three years, opened for one, and for less than five minutes after you discover this pie.


that pie, the nutmeg-mapley-goodness one, is, hands down, the best pie i have ever made. i have brought it to three potlucks and people just go bananas over it.
Oh I don’t wanna get started on my diatribe about that fake nastiness that they call maple flavored pancake syrup. Sadly, there are many out there that don’t understand the difference between maple syrup and maple flavored high fructose corn nastiness. Just the other day I was with a friend in the grocery store and had to explain the reasons why the fake stuff wouldn’t go in my mouth. She had no idea that it wasn’t real maple syrup. So troubling.
I whole heartedly agree that high fructose corn syrup (and MSG, too!) should be sent to the ends of the earth. The stuff is seriously evil.
