The "fideos" we use for fideua are pretty thick with a tiny hole inside along their length. You can cook any kind of "paella" with fideos instead of rice (with seafood, chicken...). And breaking up the noodles ended up with little pieces of noodles flying everywhere (to the delight of the puppy) but overall --yummy and this def. falls into the category of comfort food.
